If you are sailing with or in a Cruise Meet group with someone sailing Concierge or with a higher Castaway status, you could ask them to let you know what's available when their booking window opens. That's the only way to know for sure.
It is also possible for activities to open up after the initial bookings begin, so if there's something you want but don't see, you can keep checking. My husband and I found late evening alcohol tastings that weren't listed when we first booked but were available a few days later.

It goes onto your onboard account on day 1. I think there are certain points they will put the charge thru, but we went to guest services on day 1 to apply our Disney rewards $ to our account and it covered all our expenses... actually got $400 put back on the card due to a cancelled excursion.Bringing this thread back up to ask another question, as I get closer to our booking date. If you book a DCL adventure, when do you pay for it? At time of booking, at embarkation, or on the day of the excursion? Does it go on your onboard account for payment at end of cruise? TIA!
