I am considering buying a AAA Magic your way package with dining. The sticky part is that my husband and I do not need tickets for this trip, but our daughter who is three does. So my question is- can we buy the 1 day ticket with our package to get dining and then save our one day and upgrade them a future trip?

Yes, you can. The 1-day tickets do not expire until they are used. SO, you can save them until you're ready to upgrade them to APs or MYW passes with more days.
