Due to pouring rain and a sick child we didn't get to use 3 days of our 7 day tickets. We did get the non expiring. Say we go back in a couple of years, can we add more to them for just a couple of more bucks or will we have to start over at the more expensive base price. At that time could we add the park hopper option? Or where is a good web site to find out the ins and outs of tickets?

Too late to add more (days, hopping, etc.) to those tickets. Tickets used more than 13 days ago may no longer be modified, although you could upgrade multiple times within those first 14 days when you started using a ticket.

Probably better to buy a brand new ticket without non-expiration to cover the entire next vacation, if more than 3 days. Use the old ticket for a vacation of 3 days or less.

Furthermore, after a ticket is made non-expiring, adding more days costs a lot more than a coupl'a bucks. Here, days after the first three average something like $30. each.
