We're not planning on park hopping, but if I bought a 5 day pass (non-park hopping), could I use it at 2 different parks on the same day and just have it count for 2 days?
 
I know it sounds like a great idea, but it's a no go..they don't allow that.
There is an explanation about it on the wdwig.com website.

No. The computers know if you have already used the ticket that day at a park and will not allow you to use the same ticket at another park that day unless you've added the hopping feature.
 
If you try to do it, on the Guest side of the turnstile will be the words "ACCESS DENIED" and on the Greeter side there will be two lines, the first with the ticket type and number of days, and the second will say "CROSSOVER NOT PERMITTED" and the turnstile will not unlock.

If I am working the turnstile I will politely return the ticket to you and suggest you either go back to the first park or go to Guest Services and get the tickets all upgraded to hoppers at $40.00 (plus tax) per ticket.

Note also that unless you get the Water Parks Fun option you cannot use a regular ticket or a Hopper at the Water Parks, WWS, DQ or PI.
