If I get one day one park ticket and decide I want to go to both parks in one day can I get it upgraded?

yes you can
you need to go to guest services inside the park to upgrade the one day one park ticket.

once you leave the park, you will not be able to upgrade to the two park one day ticket.

There is a reservation kiosk in Citywalk but I don't believe it is a parks guest services location.

I believe you will need to go to guest services. There is one located outside of each park that should work for you.
