Ok so we are going in 10 days & I just booked everything including tickets 2 days ago & We got an upgrade that made our 3 day hopper passes to a 7day hopper. we will only be able to use 4 days on them is there anyway to add the no expiration to them since we already purchased them?
 
Yes you can add non-expiration to them any time after entering a park on the first day you use the tickets, and before going home. (Some obscure limitations apply, which from what you described you will probably not run into)

Note that non-expiration might not be cost effective unless that ticket (you can add up to 3 more days as well) will fill your complete needs on a (any) future vacation*.

* This is because one non-expiring ticket that covers 1-1/2 vacations plus one regular ticket that covers the second half of vacation #2 almost always cost more than separate regular tickets one for each vacation. If you are into water park fun, that option on a non-expiring ticket can, depending on your schedule, last years after the park days are gone and help justify adding the non-expiration
