We are planning a trip the end of August (with free dining). If we do not use all of our days at the theme parks, can we change the leftover days for non-expiring tickets, or is this something you have to do when you buy them with your package. I see it as an option, but only wonder cause last year, we never got to the park on our last day, so that went to waste.

I'm almost sure that you can add the no expry to your tickets at anytime during your time window, as long as you do it before it expires. If all of a sudden you find out that you are not going to use two days then i would look into this option rather then lose it all together.
 
My understanding is that you can do this but it may be cost prohibitive. You have to pay for the no-expire on the entire pass, not just what is left.
 
Yes. whatever it would have cost at the begining is what it will cost during the pass. But at least they give you that choice, and you have to figure out if it's benefical to you or not.
