Got a 1 night stay at Royal Pacific Hotel so we get Unlimited Express Pass but plan on getting two 1 day passes -- so do I:

1) buy tickets at the hotel the morning we check in before the park opens?
2) buy tickets at the gate
3) buy tickets on undercover tourist (which happen to be 34 bucks cheaper than gate right now)

We are driving to the hotel the first park day in the morning -- early get there before 8 (check in, etc etc)- gate opens at 9

Just buy the cheapest you can find.

Are you doing one day in the park or two?

I would buy in advance as I would not want to waste time in a line once there for ticket purchase

Once I check in to the hotel, I want to head straight to the parks

Prefer to do any line waits for rides, not ticket purchases

That depends on whether the OP is buying the tickets for 1-day with someone else or tickets for them-self for 2 days.

But the suggestion to look at prices on Undercover Tourist is a good one.

True!! I never read it that way but you are correct! I assumed since you get EPs for both day of check-in and day of check-out, that he/she meant he/she was buying tickets for those two days.

I kind of assumed when they said "first park day" that they were doing two...but who knows!

So the plan is take advantage of the express for the check in and on the next day when we check out. So i would be buying a 2 day pass without park hopper - just one park a day -

Sounds like get them before we show up to save time -- and undercover tourist is a good place

I would add the park to park option! I never bought park hoppers at Disney when I used to go but wouldn’t do without it at uni. Most will say you’ll miss the train that goes between the two parks which is true but it’s the flexibility to be able to go back and forth and redo things that I’d totally miss. Uni parks are very close together and park hoping is so easy to do. It is so worth it to pay the extra for park to park!
