HMG - If I could get it to you, I have a HUGE bag of chicken breasts in my freezer from Sam's Club. I just bought them, but will probably never use them. I thought they were boneless breasts - yep, nope, them have bones. I refuse to eat them. ICK!!! Can I use them in soups, anyone?

I forget to check my freezer for hidden treats......and when I DID take a peek I found *groan* 2...count 'em 2!!! small slightly frosty steaks underneath some frozen peas!

I carefully thawed them (the meat, NOT the peas LOL) and we had a delightful dinner. Rounded up a few potatoes and ate some of our last fresh carrots out of the garden......I'm not feeling so sorry for myself anymore. :cool:

So what other dinners were served tonite?

Do you like soup? Beans soups are very cheap to make, so is chicken and also vegetable. You can make a pot and have a few nighhts worth of dinner or freeze some for a future meal. Hungarian Goulash is another inexpensive but tasty meal.

Let's see...maple garlic boneless pork chops, homemade mac and cheese, fresh green beans. oh yeah, I made peanut butter cookies today so I guess that's dessert.

My son, who lives on his own, calls about once a week and says, "Mom, don't you need to clean out the freezer this week? And donate to me!" He's so pitiful LOL!!!
 

I had deep fried scampi in breadcrumbs and a few chips (french fries!) from our fish and chip shop! :)
 
I’m making breakfast. Cheese omelets, hash browns and bacon. Yes my friends, cholesterol on a plate.
 
I made Chicken Yum for supper. Boneless Chicken breasts topped with swiss cheese, cream of chicken soup mixed with just a bit of warm water to make it spreadable and topped with margarine and herb stuffing. We also had mashed potatoes and broccoli. It's easy and delicious!

Since its Wednesday, we went to my parents house for pasta, like we do every week.
The deli where we usually get the sauce at was out of it today and luckily I had some of mine frozen so I brought that over.
 
enchiladas with spanish rice with lots of cheese!! I like to make em gooey ::yes::
 
Jim is cooking chicken and rice w/ peas and carrots.




But, last year when my BIL was laid off, I bought them 2 boxes of meat and veggoes from Omaha Steaks for Christmas. They loved it. At first , I thought it might be weird giving them food for Christmas, but since I knew their budget was tighter than tight and they had to eat..........

Well, he had a job for 5 months and they restructured and was laid off again. Since I am not working right now, I may not be able to do the same amount, but may do food again.
 
I had one of those premade pizza crusts. I used some left over cold cuts (ham, provolone cheese, and salami) plus I added cut up string cheese to it. ::yes::
 
We had steak...mmmmm...it was so good..marinated yesterday and all day today!! mashed potatoes and corn!! Gee...I'm starting to feel traditional in my meal.

TerriP....I wanna come over for dinner...I LOVE fetuccini alfredo w/ chicken..not really broccolli..but I can't throw that to the side right?
 
I had baked fish and mashed potatos. I have a suggust to you called up some your local churchs and ask if they have something called Angel Food Minsrty if they ask how much it cost. The reason I telling you this is because for 21.00 a month you can get a box of food for a good price and it includes meat. Alot of churchs do this in the south it's a blessing and bargin. This is not a charity either. This what I'm doing to keep us a flow on a tight budget.

Believe me about all our churchs in the south is doing this whether you or rich or poor it's open to everybody.

I was just wondering, why don't you have any meat? :confused: Have you considered getting a second, seasonal job for the holidays, that might make things easier for you. I know the Target near me is hiring a lot of people for this season! :)

The inlaws are visiting and my mom came for dinner too so I cooked big. We had pork tenderloin (on the grill), rosemary and garlic roasted potatoes, green beans, salad. Isabella made dessert, those Pillsbury Halloween cookies that you frost and add the 'scary' decoration. We're all stuffed.

Thankyou for the suggestion crazelion. I think there are churches in our area that are doing this as well, especially now that there are many more people laid off than there were last winter!
The lack of meat isn't really hurting us that much though. In fact, I suspect it's better for our health to be cutting back on that sort of thing, right? LOL

I do get in moods where I crave it though, and I know hubby does too! LOL It's actually been fun to see how creative I can be with our food budget, sort of like a game.
When it gets right down to it, both families are there for us with food or grocery money if we need it and we know that...but we're just trying to be as frugal as we can be right now.

How odd it was to actually feel satisfied though, by reading what others were having for their dinners! LOL That was a neat experiment for myself I guess.
