Three Things...Gratitude Thread

I love my phone And it seems I am always learning new things I can do with it!

Love my Notes app. Used it today to look up a medical date. Did it while at one of my many doctor appointments!

My DGD was using my phone on the long ride back to her Mom’s house tonight. She plays games, sends silly texts to her Mom, and asks Siri questions. Tonight’s were Show me hairless cats, then fluffy dogs, fluffy chickens…you get the idea. She also did a google search on whether there are bees that don’t have stingers.

Camera, Kindle, IMDB, sports scores, facebook, NYT games, Duolingo, and on and on. :)

There’s very few cheeses I won’t eat her a couple one that comes to mine is blue cheese I have never required a taste for that but most cheese I like a lot like way too much !!

I'll second everything WDWEPCOT has said, aside from blue cheese I'll happily take all the cheeses please. I couldn't survive without cheese!

1. Toasties - toasties are one of my go to quick lunches especially when working from home, or as a nice light(er) lunch when out and about. Usually I stick with my healthy 50% less fat cheddar at home, or Brie if I feel like being naughty.

2. Carbonara - a traditional carbonara is one of my favourite meals as its so quick and easy yet also really tasty. And the traditional one only needs a bit of parmesan, egg and water. Parmesan is such a staple in my house.

3. Mac & cheese - the cheesier the better, one of my favourite comfort meals.

Honourable mentions also go to mozzarella dippers, cheesy garlic bread, brie, cheesy stuffed crust pizza, camembert and yep, just anything cheese 🧀😂
 
Cheese has been the only real thing I've been avoiding during my fitness journey to return myself to health and hopefully stay consistent in the long run after I hit the biggest of the big goals. I can count on one hand how many times I've had actual true cheesy dairy gold since last November. I love it, but it's the one food where I lose all control. As I age, my tummy is also not a major fan of the stuff. That right there makes it a lot easier to say no thanks, even though it's my fave. So, here's my tribute to less fun cheesy stuff that has kept me sane and healthier...

1. Cottage Cheese - Yes, it's cheese in name, but let's not pretend like this stuff is a creamy brie, a tangy dill havarti, or a staple like cheddar. Either way, cottage cheese doesn't bother my stomach, it's really high in protein, the low fat stuff is pretty kind on the fat and calories, and as all off the protein vloggers can tell you...it can be pretty versatile in recipes when blended in/baked (although, I prefer Greek yogurt for many of these things). I often make myself a cottage cheese salad for lunch with 2 servings of the stuff, a serving of coleslaw mix (just the duo of cabbage and carrots), maybe some roasted sunflower seeds for crunch, a serving of crumbled salad bacon for some smokiness, if there's room in my calorie intake- some avocado, and anything bagel seasoning. The volume from the cabbage and carrots makes this big enough to fill a medium sized mixing bowl and it's pretty satiating.

2. Violife Dairy Free Smoked Provolone - There are a lot of different vegan cheese products out there, but very few taste like the real thing. I've tried other super popular ones like Miyokos, Daiya, and Chao...as well as the yucky plant based Laughing Cow...just to name a few. Chao isn't bad for their version of white American, but the Violife provolone is convincing enough to keep my brain happy and allow me to have things like a grilled chicken sandwich with some "cheese."

3. The real stuff- Sitting in my freezer is the leftover mac & cheese I made on my birthday. I made enough that I had enough leftovers to fill a full sized Pyrex casserole dish. My tummy is going to be screaming at me, but this baby is getting thawed and baked for Thanksgiving. I am super serious about it with my mac & cheese.

#1 - STUFFED PIZZA - So much wonderful cheesy goodness with a stuffed pizza. We'll be getting our annual one on Christmas Eve.

#2 - GRILLED CHEESE - I love grilled cheese sandwiches with a big bowl of tomato soup.

#3 - STRING CHEESE - My go to snack between lunch and dinner when I'm hungry. It'll always tides me over until dinner.
 
Oh my gosh, a National Day made just for ME!!! I learned the beauty of the fried cheese curd just this past summer, from a friend who is as addicted to cheese as I am. We used to sneak out to Dairy Queen at 10pm, just to indulge! I love all things cheese, so it makes it hard to decide on just 3.

Macaroni and cheese- My homemade is my very favorite, but I'll happily eat any mac-n-cheese. I am not a huge fan of red sauce on pasta, but put any kind of cheese sauce on any noodle and I am a happy camper. DD has to work on Thanksgiving this year so we'll save our big family celebration for Saturday, but on the actual holiday, they are coming over for macaroni and cheese!

Double cheese pizza- preferably with canned mushrooms, and/or sweet sausage. Bonus points if it's a cheese-stuffed crust!

Cheese enchiladas- a local restaurant stuffs corn tortillas with cheese, onion, diced tomato, and raisins, tops with more cheese and bakes them in red sauce. Heavenly!

All the rest of it!! Baked brie, grilled cream cheese with sliced green olives, grilled cheese made with white bread and deli-sliced American cheese, cheese omelets, anything stuffed with ricotta... I could go on, but I won't. You catch my drift!!
 
CHEESY

50 years ago a character by the name of Holly Hobbies surfaced.... and I guess she resurfaced....so these are probably 40 years old ... I have them because they were part of a large yard art auction lot and now protect the dogs from the cactus
... but what is really cheesy is this muskrat concrete statue dressed as a lumberjack ..so this traveled from the north States

Like TT, I’ve had to cut way back on my cheese consumption. I no longer add cheese to my dinners and cottage cheese is one of my staples.
I do allow myself to have a tiny square of Colby cheddar as a snack now and again.
And very occasionally I will indulge in one slice of pizza.
Honorable mention: one of my favorite cheeses is Asiago.

3V- so many great things Veterans, vision, vacation, valentines

3 day weekends - an actual day to rest and play, sleeping in, being lazy, NOT BEING AT WORK
(I had to be at school today. We are off the 24th.)

Phone- instant communication with my loved ones, information at my fingertips, photos, and games

Cheese- when I could eat it
Pizza
Grilled cheese
Cheese and crackers
 
Exercise - From just being physically able to do it to what it does for your body and mind when you can.

Empathy - We can't relate directly to everything everyone is going through, but we can still be kind and caring people in their times of need.

Etsy - It's not an all the time shopping place for me but it is a good source for some custom items. I know I've gotten some special ones over the years, from custom tees and cruise door magnets to special mouse ears. While I know there are fees involved for sellers, I do like that there is a place that some people can use to sell their creative goods.

Envelopes it’s like an obsession with me I like envelopes all different sizes all different kinds I like envelopes I find all kinds of useless for them
