Thoughts on switching Dining Plan... what am I missing?

Im thinking this out, and would love some input from the experts.

On previous trips to WDW, we bought the deluxe dining plan. My son (age 16) and I love good food and would get a snack for lunch and then go to a double point restaurant for dinner. (whatever you call the double point restaurants!)

On this trip, we are on a tighter budget and the difference on the 2 plans is $300 for the three days. That is a lot!

Here's what i was thinking...
we love BOMA for breakfast and if we went there, I could pay (about $50 for both of us.) That night, we could have a Quick service dinner (and a snack in between) Another night we could have a double point dinner, with the quick service breakfast and snack for lunch and the last day have the quick, snack and one point dinner. Then, if I have to supplement, I can't imagine spending $250 on more food. Am I missing anything?

Also, I am pescetarian (vegetarian, plus fish) and my son eats everything (in sight!) Any recommendations for one point restaurants for me?

We're probably staying at a value hotel
