Thoughts on my 3 day park plan for Presidents' weekend

It will be me and my adult daughter Thurs Feb 11- Sun Feb 14, which is President's Day weekend. Staying at Swan. I have AP and she has 3-day PH. Our priorities are enjoying all the food booths at Epcot, which probably means 2-3 separate trips due to being too full, doing most of the major rides at HS, and going to AK. If we don't get a BG for Rise, that's ok. No MK on this trip. We never go on a holiday weekend, but this is how it's working out this time.

I'm thinking Thursday do Epcot first (at least half the food booths) then hop to HS for late afternoon/evening (SDD, MMRR maybe MFSR). Friday do HS in the am (Tot, RnRC, MFSR) then hop to Epcot in the evening to finish the booths and revisit our favorites. We will RD AK on Saturday, and then +/- hop to Epcot or HS if we're not too beat by then! I'm worried about the crowds in Epcot on Fri and Sat evenings, but I'm hoping we can manage. If Ratatouille is open, that throws an extra challenge into the mix.
 
Hollywood Studios is the park that fills up so getting it booked would be my first priority. After you get it in the books you can plan the rest of your trip, but it should be no problem to finish each evening at Epcot.
 
I would try to figure out which food booths are the busiest and try to hit those on your full Epcot day. Try to get there early in the day to avoid the crowds. I think the crowds will be heavier on the weekends and especially the weekend evenings.
 

Thanks. Maybe I should just do Epcot on both Thurs and Fri at 11am and avoid hopping to Epcot on the weekend evenings. Then HS would be on Sat am. That would mean that in order to do AK, we'd have to hop over there one day. AK is open until 7pm on Saturday, so maybe that would work.
