I had a bunch of frozen cod filets from Sam's Club. I feared they would go to waste since the first time I fixed them they were so bland I did not think I could ever revive them. Until Wednesday's food section in our local paper.

The suggestion was to pour a packet of taco seasoning mix into a bag and place fish filets, one at a time, into the bag and give a shake. Place filets on the grill.

I took this suggestion to the next level. I had a bunch of broken blue corn tortilla chips, along with some broken white corn tortilla chips. I ran a rolling pin over the chips until they were crumbs. I then added a package of taco seasoning to the bag along with some cayenne pepper powder. I put the cod filets in, one at a time, and coated well. Since I did not feel like firing up the grill, I put the filets into the toaster oven for 15-20 minutes.

Wow! No more bland filets! They were great. My son and I wrapped them in tortillas and added lettuce, tomato, etc. and had fish tacos. I highly recommend this to all of you trying to figure out a way to spice up a lenten Friday night supper.
 
I am really trying to add more fish to our diet but I don't really know who to cook it. I will be trying this. thanks.
