Sweet Onion Casserole

1 pound sweet onions, sliced into rings and separated (Vidalia or other type of sweet onions)
1 egg, beaten
1 cup heavy cream
3/4 teaspoons salt
1/2 teaspoon ground black pepper
1/2 cup shredded Cheddar cheese
paprika

Place onion slices in a medium saucepan; cover with water. Bring to a boil; boil for 1 minute. Drain onions; transfer to an 8-inch square baking dish. In a small bowl combine egg, cream, salt and pepper; pour mixture over onions. Sprinkle with cheese and paprika. Bake for 25 minutes at 350°.
Serves 6.
 
My mom makes that every year when vidalias are in season!

She also tops it with cracker crumbs, usually the stone-ground wheat crackers. It's so good!
 
Boy, if I wasn't doing low carb, I'd dive right into that. It sounds terrific!

I can tell you right off the bat that my kids won't eat this. Not that that's a problem, it just means more for me and DH! :D
