Hehe... it's hard for me to imagine running out of things to do in Orlando...in 3 trips over the last 2 years (and 2 upcoming) I still feel like we've barely scratched the surface! We still haven't made it to the 2 Disney water parks, Universal, did a small part of Seaworld last trip, haven't been golfing there yet, and SO much more!

We just got back from Celebration they have snow every night on Main street, and some great shops and restaurants as well!
A train ride for $3.00 and handsome cab rides as well!
For the month of December
Don't forget Kennedy Space Center. It's only 1 hr drive (very easy drive) from Orlando. We went last May for the 1st time, 9th trip to Orlando and loved it. I was only going to pacify dh who kept bugging. I wanted him to go w/kids so I could shop but I'm so glad I went. It was much more interesting than I expected. We did the NASA Up Close Tour and it was very informative. We spent an entire day there and never even had time for the Astronaut Hall of Fame. Will have to save it for next time!
Downtown Orlando is often overlooked by tourists, but you should consider it. You can walk around Lake Eola and visit the Thornton Park area, where there are shops, restaurants, bars, and historic homes and neighborhoods. Also check out College Park for trendy shops, restaurants, wine bars, etc.
Ditto on the Lake Eola recommendation. It has a weekend Farmer's Market (I can't remember whether it's Saturday or Sunday), but the market itself is really small. The lake has such an eclectic & interesting grouping of people, and is a neat place to people watch. Last time we were there, there were the Farmer's Market customers, family groups feeding the birds, homeless guys yelling or sleeping on benches, tai chi groups doing their thing, and a group of anime re-enacters dressed in funky outfits, pink wigs & such. Very neat.
Mount Dora is also fun to visit. They have the Ridgeback Winery, which, unlike Lakeridge, is right in town so doesn't have the lovely fields. It does have a wider selection of wines, though, ranging from dry wines to the dessert ice wine. There are lake cruises available here, as well as town tours offered by Segway of Central Florida. I think the tea shop is neat, too. It's a fun place to spend some time.
The Millennia Mall is pretty upscale & is located right next to a very clean Krispy Kreme (vs. the dirty, smoky one on 192).
Picking citrus at the place on 27 is great fun, and they sometimes have live entertainment.
This is all that we've found so far, but we keep exploring, and I'll post if we come up with better ideas
