I assume you mean in the Orlando area? Sea World, Mini Golf, Gatorland, Old Town, Medieval Times...
 
We just went to Orlando earlier this month and did part Disney/part not. My husband was at a conference part of the time so my daughter (7) and I had to entertain ourselves those days. We went to the Crayola Experience and LOVED it. She was the perfect age for it and it was a nice air conditioned activity. If you are staying someplace with a nice pool area, maybe relax and spend a day with that? As part of the conference we were at World Center Marriott which was very nice (and more than we would have sprung for personally) and we spent a day with the pool, water slides, kids area, etc. Our other day we went to Epcot, but that takes you back to Disney. We also hit the outlet malls one evening.
 
I have to second the Crayola Experience. It was way more fun than I anticipated. If you go, look for a ticket deal on groupon or living social, they usually have the best prices.
 

We enjoyed an afternoon at the Wycliffe Discovery Center. It's an organization that translates the Bible into other languages. There are lots of cultural displays and hands-on activities. I realize not everyone is into this, but if you are interested, it's a nice place and well done.

You could also walk around Celebration, a master-planned community.
 
Disney Springs is a lot of fun (not a park).
 
Go pick oranges. 20 minutes from Disney is Showcase of Citrus. We go 2 days before our trip ends and bring home fresh oranges, limes, & lemon all of which we picked ourselves.
 
What type of activities are you looking for? and do you have a car?

1) Cape Canaveral ( Kennedy Space Center)
2) Cocoa Beach day and you could head over to the park and watch the cruise ships come and go, also lots of great places it eat.
3) If you are up to a day trip, or wanting to add a day, St. Augustine is a really nice area, see the fort and the town.
4) Clearwater beach- spend the day at the beach. Sand Key Park very family friendly just over the bridge, saltwater fishing excursions, pirate ship cruise, dolphin cruises
5) Airboat rides or Cruise the St. Johns River on a river tour, kayak tours ( St. Johns River)
6) Ft. Desoto Beach, tour the fort and spend the day on the day
7) Mt. Dora - wonderful little town and some unique shopping, there is a town square and there are music festivals and craft fairs.
8) Webster flea market - only on Monday
9) Lots of shopping, 2 outlet malls and 2 large indoor mall
10) Lego Land
11) Mosi ( Museum of Science and Industry) and Lowery Park both over in Tampa
12) Mini Golf
13) Golf - lots and lots of golf courses - as well as Top golf
14) Fishing ( fresh water) excursions
15) Gatorland
16) Several water park options - Blizzard Beach - Typhoon Lagoon ( Disney) Volcano Bay ( Universal) Aquatica ( SeaWorld)
17) Disney Springs - not a park
18) Universal and Island of Adventure( not a Disney park)
19) Crayola experience
20) I-drive - Wonder Works, mini golf, Icon - (Eye over Orlando) and Sea life Aquarium
21) Helicopter tours
22) Sea World ( not a Disney Park)- Discovery Cove( way more than just a water park)
23) Ice at Gaylord Palms ( seasonal)
24) Lots of movie theaters - Disney Spring, City Walk,
25) Busch Gardens
26) Dinosaur world (right off of I-4, in Plant City)
27) Glazer Children Museum ( Tampa)
28) Florida Aquarium ( Tampa near the docks where the cruise ships are docked)
29) Green Meadows Farm

Is is all adults? If there are children, what ages? There is ton to do in the Orlando area that is non-Disney.

Are you looking for shows, indoor activity, outdoor activity, free activities?

The "Orlando City Calendar" is a good resource to local festivals and activities in the area that is targeted for locals, not really tourist, but can be appealing for tourist as well. http://www.cityoforlando.net/calendar/

We have a lot of great state parks in the area and some hidden gems as well.
