Thick-cut pork chop recipes?

We went to Sams this weekend and stocked up. We live way out in the country and go on a huge trip once a month or so and just go to our little local store for the small things/perishables we need every week. Well, I was breaking the big packages of meat down and putting them in freezer bags and labeling them today. When I got to the porkchops-they were huge! I mean, one and a half-two inches thick. I am always a little nervous when I do pork because I hate overcooking it, but undercooked pork can be very dangerous. Any good ideas on how to cook these ? Whats the best way to make sure they are done but not overcooked? What is your favorite pork chop recipe?

Actually, the last reported case of pork-borne trinchinosis occurred in the 1960's. Today's pork is free of this parasite, and gone are the days of having to cook all pork to a "well-done" state. Pork can be enjoyed "medium" or even "medium rare" -- and is more tasty too!

What about trichinosis?
Because of modern feeding practices, trichinosis is a no longer a concern. Although trichina is virtually nonexistent in pork, if it were present, it would be killed at 137 degrees F. That's well below the recommended end cooking temperature for pork, which is 160 degrees F.

You can make stuffed pork chops. Cut a pocket into them (don't cut all the way through) and put your favorite stuffing inside the pocket.
 
DH loves pork - especially the thick cut pork chops and pork loin - so I'm learning all kinds of ways to cook it!

I like to use a recipe website: www.allrecipes.com and search for "thick pork chops" for ideas. Today I've got my thick cut pork chops in the slow cooker with sliced potatoes, onions and carrots and a marinade of red wine vinegar, olive oil, rosemary, garlic, chicken stock, and just a little bit of crushed cumin seed for zip. I've also used the slow cooker and made carribean jerk pork chops, spicy asian peanut sauce pork chops, and a tomato-veggie pork chop recipe that is really yummy with pasta.

If you are at all worried about internal temp, just get a kitchen meat thermometer. Oh, and I use lots of liquid and do a real slow cook on the pork to get it nice and juicy but still cooked through. We have also grilled the thick cut pork chops after marinating them overnight, and that works beautifully when it's grilling season! We sometimes shred the pork and use it for BBQ sandwiches after grilling it. Yumm...
 

Place single layer in a baking dish. Add 1/4 cup water and 2 T of vinegar. Place a slice of onion on top of each chop. Cover dish tightly with foil and bake 325 for 45-60 mins. BTW this broth makes wonderful gravy. Put broth in a saucepan over med heat. Make a mixture of cornstarch and cold water and mix well. Slowly stir into broth and cook well, stirring constantly. Wow, it is good.
 
I like to make pork chops with Oven Fry. You dip the chops in egg, then coat with their crumb mixture then bake. I actually usually take mine (they do cut them thick at Sam's!) and halve them, kind of like butterlying them, but cut them all the way.

allrecipes has a really good recipe for lemon pepper porkchops that's really good and easy. I use it for the thicker chops as well.

ETA: when in doubt, use a meat thermometer. They're cheap and easy to use. It will tell you right on it the temp it needs to be, just be sure it gets to the thickest/middle part of the meat.
 
An idea that I do with a full pork loin but you could do with thick cut chops too...

Get a McCormick pork mix that comes with the plastic baggie. The reciepe calls for water with the mix but instead I use half water and half orange juice. You bake it and it comes out SOOO good.
 
4 c. apples, peeled and sliced
1/4 c. brown sugar
1/4 c. white sugar
2 T. flour
1/2 tsp. cinnamon
1/8 tsp. nutmeg
4 America's cut pork chops (1 1/2 - 2 inches thick)
1 egg
1 T. water
saltine cracker crumbs
1/2 c. water

Slice apples as for pie. Mix with sugars, flour and spices. Place in baking dish. Dip chops in egg and water mixture. Coat with cracker crumbs. Lay over the apples. Pour 1/2 c. water over all. Bake at 350 for 1 to 1 1/2 hours.

You could skip the coating on the chops or use a coating that you prefer.
 
Since they're so thick, it seems a shame to do something that doesn't make use of the extra room to make a pocket! This is our favorite:

Raspberry-Stuffed Pork Chops

4 chops
4 Tbl raspberry jam, seedless preferred
½ c dried apricots, chopped
1 Tbl oil
4 Tbl vinegar
2 Tbl honey
4 Tbl orange juice
1 Tbl mustard

Cut a deep pocket in each chop. Chop apricots & combine with jam. Divide into equal portions & stuff the chops. Brown the chops on both sides. Add remaining ingredients, lower the heat & simmer 8 to 10 min.
 
Around here the thick pork chops are called Iowa chops and are our favorite! Here is our favorite recipe:

Season chops with seasoned salt, brown chops in skillet with butter. Take chops out and saute a chopped onion in the butter/drippings until tender. In a bowl stir in one can of cream of mushroom soup, 1/2 can water, 8 ounces of shredded cheddar cheese, the onions and drippings. Put rice mixture in pan, put chops on top, cover with foil and bake at 350 for 45 minutes. This is delicious!

Disclaimor: I put down this recipe from memory...I'll double check it tonight at home and make sure I got it right...I'll edit if it's wrong.
 
I use the recipe site recipezaar.com as well as allrecipes.com. I buy the chops from cosco, and they are thick. Last week I crushed ritz crackers and added parmesan cheese, salt, and pepper. Melt some butter to coat the bottom of a baking sheet. Dredge the chops in theh cracker mixture, moisten them in beaten egg with a bit of milk, and then back into the crackers. Bake them at 375 for 20 minutes on one side and turn. 15 to 20 minutes on the other side. Yummy!

You can also marinate them in a tequila lime marinade or a carribean marinade and then grill them.
