Is there somewhere to call to get the current crowd level in each park? Or possibly a web site that monitored the turnstiles?

Nope, only the word of mouth of folks who are there...

In fact, Disney does not publicly release attendance information.

Even in the aggregate (weekly, monthly, yearly total) Disney guards this information. And I can't see any benefit to them in providing information that may make guests decided not to go to WDW on a given day....
