The World in June, planning and tips

We are visiting the World June 16/17-July 3. Our group includes my DH and I, our 3 kids DD(10), DS(7), DD(4.5), and my mother. DH and I went to the world 12 summers ago (same time in June) for our Honeymoon for 6 days and stayed at Pop; this was before he was a Disney Parks fan. No one else has visited WDW before. We live about a 6 hour drive from Disneyland and have made many trips there including owning APs the summer after each kid turned one. We will be in FL for just over 2 weeks, my mother will be there a few days less than us. We have a split stay, first at Wyndham Bonnet Creek Resort (close to EPCOT) and then at a Resort off of Sherberth Rd. (closer to DAK). We will be renting a car. We have already purchased 9 day Park Hopper+ tickets, Mom has 7 days.

With a bit of frustration that Disney has not announced summer DAH events, I've been piecing together an itinerary with dining reservations. So far I haven't had any trouble getting reservations even though I didn't book at 180 days out, but I've noticed it is getting harder to change them. Hence my frustration that party dates are not announced. Our plan is looking something like this:

June 17: Mom flies and arrives at MCO late; checks into Resort, we fly red-eye from CA
June 18: We arrive early, get rental car, head to resort to relax, rest, enjoy pool, unpack, and at some time go grocery shopping
June 19: First day EPCOT 8:05 breakfast at Akershus, enjoy EPCOT until early afternoon; return to hotel to rest/nap and eat before going to MK for After Hours Villains party around 6pm (unless a regular MK party is announced later)
June 20: Sleep in, HS with afternoon FP, stay for Fantasmic
June 21: Rest day, water parks and/or Disney Springs day
June 22: Magic Kingdom day, reservations for lunch at Be Our Guest (switch to EPCOT?)
June 23: AK (finally), arrive early and/or stay late to ride Pandora, Tusker House late breakfast reservation
June 24: Beach day and switch hotels

After this I am not sure how to focus the remaining days, I will need to figure this out before the 30 day FP window I suppose

June 25: Park Day
June 26: Park Day
June 27: AK morning, mom flies out late afternoon, either return to parks or visit water park
June 28: Rest, and water park day
June 29-July 2: 2 ticket days left plus a day at Legoland and extra water park time
July 3: Fly home

We have reservations to BOG on June 22, but I'm considering it may be a better Epcot day if we're doing a MK party since we are staying so close to Epcot. Then the 25th would be a good MK day if I could move my reservation.
I know we need a full day at each park, and likely an extra half day at each during my mom's portion of the trip. My DH felt like we spent a lot of time at MK on our last trip, but that is where the ride concentration is. I know he will want to spend some extra time at HS. I love AK and definitely want to spend more time there. My kids love water parks and so we need to do each one at least once, but probably twice. We have a car and so taking midday breaks if needed and park hopping is a definite feasibility. I feel like the last two days may be a wait and see and get FP a day or two before based on what we need to visit or do again.

Looking for some insight on how to use extra days, half days, etc. Since we aren't staying onsite our FP will not be able to include FOP or Slinky or any of the hardest to get. So some early mornings or late nights may have to be used to get on those rides. I have a Touring Plans account and have looked at current crowd predictions and considered those and EMH when choosing park days. I should note our youngest should be able to ride everything except the two 48" rides, and she's done all the Mountains at Disneyland. So we won't have to use rider swap too much. We will be bringing a simple stroller.
