Bourbon Christmas Cake

I got this recipe from my aunt in San Diego. I expect that most of you might already have a version of this recipe already. It will take at least 2 or 3 days to complete, with soaking the fruit and with soaking the cake. ;)


My Starting Ingredients:

  • Whole Red Glace Cherries, 2 cups (I’ve used about 500 g because I love the hit from the cherries)
  • White Seedless Raisens (Sultanas), 2 cups (I’ve used about 350 g)
  • Bourbon, 2 cups

  • Butter, 2 cups softened (I’ve used about 450 g)
  • White or Castor Sugar, 2 cups (I’ve used about 450 g)
  • Brown Sugar, 2 cups (I’ve used about 375 g)
  • Eggs, 8 – separated
  • All Purpose Flour, 5 cups (I’ve used about 675 g)
  • Pecan halves, 4 cups (I’ve used about 500 g)
  • Baking Powder, 1½ teaspoon
  • Ground Nutmeg, 2 teaspoon
  • Cinnamon, 1 teaspoon
  • Salt, 1 teaspoon


Combine the cherries, raisins and bourbon in a large mixing bowl.

Cover and let stand in the refrigerator at least overnight. I soaked mine for 3 nights.

Drain the fruit and reserve the bourbon.

Place the softened butter in a (very) large bowl and add the white and brown sugar.

Mix until light and fluffy.

I like to hand whisk this cake…it is very labour intensive; because of the quantity; but there is something about Christmas time that brings out the nostalgia in me. Most sane people would use an electric beater.


Add egg yolks and beat in. I add them 2 at a time and continue until all 8 egg yolks have been incorporated into the mix.

Add the nutmeg and cinnamon and mix in.

Combine about ¼ cup flour with the pecans. Sift the remaining flour with the baking powder and salt. Add about 2 cups of the flour mixture to the creamed mixture and beat in.

Add some of the reserved bourbon to the mix…

…and continue to add the flour and bourbon in alternating batches, ending with flour. Beat well after each addition.

Beat the egg whites until stiff but not dry. I take this to mean soft peaks!

Fold the egg whites gently into the cake batter.

Add the drained fruits and floured pecans to the cake batter….

….and mix. For this reason I’ve never figured out why I fold the egg whites into the batter! I have made this cake by just adding the whole egg to the creamed butter and sugar without separation. Maybe its me….but I’ve never really worked out the difference.

You’ll end up with a lot of cake batter.

I end up with 2 standard loaf tins and about 6 small tins out of this batch. The tins have all been lined with baking paper.

Bake in the oven at 275 F (or somewhere between 135 C and 150 C). The small tins take about 90 minutes to cook and the loaf tins take about 120 – 150 minutes to cook. Test with a cake tester to make sure it comes out clean. If not, place back in oven for another 10 minutes and re-test.

Cool cakes in pan on a cake rack for 2 – 3 hours.

Remove the cakes from pans and peel off the paper. Wrap the cakes in cheesecloth or muslin, saturated with more bourbon.

Wrap with cling film and leave overnight in the refrigerator. The next day, unwrap the cakes and re-saturate the cheesecloth/muslin with more bourbon.

Re-wrap the cakes with the muslin and cling film; then wrap them in aluminium foil.

The cakes are then placed in my freezer for at least 1 month. They do keep in the freezer for up to 1 year.

Well here is our yesterday


So our Thanksgiving is pretty small. Last year it was just the two of us, so instead of making a turkey we went out to dinner. Since it was our year to spend Thanksgiving with my parents, this year we cooked a turkey.

Here is the completed bird. I did something different this year which I heard Bobby Flay talk about on the Food Network Thanksgiving Live show. When the breast meat was cooked, he removed the leg and thigh quarters and braised them in the chicken broth that was in the bottom of the roasting pan. Foil was placed over the bird, and the dark meat was braised for another hour while we finished up the remaining sides.

We cheated and baked Claim Jumper pies, and I forgot to take pictures of them, but we had Blackberry and Apple with a cinnamon crumb topping. I thought they were just fabulous!

Oh. My. Word. This looks absolutely divine!!! :worship::worship::worship:

Today we are running a few weekly errands (Target and such) and are having lunch at Shane's BBQ. I hope everyone has a great day!

Baked French Toast Casserole
  • 1 loaf French bread (13 to 16 ounces)(I had to use 2 loaves to fill my dish)
  • 8 large eggs
  • 2 cups half-and-half
  • 1 cup milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Dash salt
  • Praline Topping, recipe follows*
  • Maple syrup

Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F.

Spread Praline Topping evenly over the bread and bake for 40 minutes (I kept mine in 5 or so more minutes), until puffed and lightly golden. Serve with maple syrup.

Praline Topping
  • 1/2 pound (2 sticks) butter
  • 1 cup packed light brown sugar
  • 1 cup chopped pecans
  • 2 tablespoons light corn syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

*The night before, I mixed together the brown sugar, nuts and spices to make things go quicker the next morning. Worked fine!*

Ladies, I need to ask for prayers once again. My DDIL called to tell me that Donny had another seizure at work and was in the ER. This time the care was 100% better than the last time but I had to tell Anna that at the risk of stepping on their toes, this was not going to happen again. I sicced Marisa on the Dr's and she was able to get him a referral to a new neurologist and he will be seen on Monday. He had not been able to get into the group where he had been seen before until Dec 30th! The Dr in the ER scheduled an MRI along with a multitude of blood tests, all which came back clean. Good news I guess but what do you treat? he said that he would nto start any anti seizure meds under these circumstances because tehy would probably be changed once he got into the specialist

I will be back later to chat but I am going to have a glass of wine for now.

I hope everyone had a wonderful Thanksgiving! I haven't had a spare minute to get online before now (and I really should be using this time to wrap Christmas presents to send home with Dad, but I can't find the tape!). We had a really nice Thanksgiving! Of course, I forgot to pull out the camera!

Dad had ordered a turkey, and it was divine! So juicy!!! It sure was nice not to have to worry about finding room to cook the turkey plus all the sides in my one oven kitchen! Dad wasn't sure the 1 turkey would be enough, so before he left home, he picked up a smoked turkey, as well. This thing was the size of KING KONG! Ginormous!!! It sure was good, though. Everything tasted wonderful, and we were stuffed!

After dinner, Alan and I cleaned up, and then he took the kids and went for dessert with his mom. Dad and I relaxed, and then spent about an hour birthday shopping for Timothy. We came home and relaxed with the movie First Wives Club. It's one of dad's favorites, so we enjoyed it a lot!

Yesterday, dad and I went shopping... not early in the morning, but we were gone from about 9:30 until 5:00. We were able to cross everything off his shopping list, and have a great time doing it. My saint of a husband kept the kids all at home and let me have the alone time with my dad! Last night we had one more pie night at my SIL's house. We had to cancel it on Monday, so we met up last night! It was fun, and we ate a lot of good pie!

Today, we are going to have a mini birthday party for Timmy. His birthday isn't actually until tomorrow, but dad is leaving today, so we'll do it now. I'm not sure Timmy really knows what's going on, but it should be fun!

Nancy - I'm so glad the pecan pie was a hit! I didn't even get a piece this year. It went so fast! I may have to make another one at Christmas!

Well, I'm home from dropping dad off at the airport. I'm sad, but it'll be nice to have a day or two to decompress from the holiday before I go back to work on Monday.

We're still eating leftovers, so that's probably dinner, although UncleR may make some au gratin potatoes just for something extra.

WFD? We're having Prime Rib, at least I hope that we are. This is one of the ones that I par cooked when I had the cooking meltdown last month. I cooked it for two hours at 275°. We're going to let it come to room temperature and then slowly reheat it. If anyone saw Alton Brown's show on cooking a chateaubriand so that the entire thing is medium rare, I'm working with that same concept.

Our school football team took state championship last night. They had the late game started at 7 pm and 3 1/2 away from home so it was a late but exciting day.

Dinner is hamburgers and son wants bacon on his. Sweet potaoes, Cashew salad and pumpkin pie. Nothing fancy.
 
Finally found a little time to catch up on this thread! I am so behind with all your news that it makes it difficult to comment when the item has moved on and been resolved.

My turn to talk Turkey! :laughing: I went to the Vic Market yesterday and ordered a turkey breast roll from the chicken shop for Christmas. They usually sell turkeys and also make the breast rolls....deboned, rolled and netted up. There are only 4 adults partaking in Christmas lunch at my place so there really isn't any point in getting a whole turkey.

So, I normally order the turkey breast roll stuffed. The chicken shop makes a decent stuffing; with breadcrumbs, mince, pinenuts, herbs. I decided to go with just a plain breast this year; but now I'm on the hunt for a decent stuffing recipe that I can prepare and cook in a baking dish. Do any of you have a recipe?

And thanks for all your wishes for DS. He is better. In the end, he had the full week off school. Poor boy...it really wasn't fun with the loose bowels and running to the toilet all the time.

Aimee - Your break sounds great except that 55 miles from Starbucks....or any sort of decent coffee....is way too remote for (even) me! I used to like camping...the kind that involved no facilities of any kind and a shovel...but these days, I need to have my coffee or there would be any psychopath running amok in the wild!

Nancy - Hope Donny is better and that he's seen the specialist (and is on more appropriate meds). What a worrying time for you. :hug:

Well, I've sat here and shopped all day. :lmao: But we're almost done!

We decided that we have had too much heavy food the last few days and we wanted something light. So, I'm making pasta with tomato butter sauce...light and yummy!

I'm barely awake right now. We'll see if I can stay up for movies tonight!

Here it is:

Cajun Pork Tenderloin with Garlic Butter Sauce (I usually double the sauce)

Dry rub:
1 tsp. salt
1/2 tsp. cayenne pepper
4 tsp. paprika
1 tsp. black pepper
1 tsp. garlic powder

2 pork tenderloins
2 Tbsp. butter
1/2 tsp. garlic powder


In a small bowl combine dry rub. Rub this mixture into pork. Grill over med-high heat or roast in a 425 degree oven until internal temp is 160 degrees. Remove and let rest at least 10 minutes.

Melt butter in a small saucepan and add garlic powder. Slice pork on the bias and serve with garlic butter brushed on top.

Head of lettuce cut up
head of cauliflower cut up
bag of croutons
2-3 cups of cheddar cheese
can of cahew pieces or whole
Dressing
hellmans mayo with powdered sugar (mix these 2 up and cool in fridge)

Dont mix until just before serving as it gets soggy after sitting a while.

That is the turkey I did too, the gravy was amazing from all the pan drippings.
