Thanks so much everyone for your concerns for Fran. I just successfully administered the first dose of her vancomycin. As learned from Brandi's TR, I decided to go to Wikipedia and look it up. :scared1:

"Vancomycin INN is a glycopeptide antibiotic used in the prophylaxis and treatment of infections caused by Gram-positive bacteria. It has traditionally been reserved as a drug of "last resort", used only after treatment with other antibiotics had failed, although the emergence of vancomycin-resistant organisms means that it is increasingly being displaced from this role by linezolid (Zyvox) available PO and IV and daptomycin (Cubicin) IV and quinupristin/dalfopristin (Synercid) IV."

Now the Doctor mentioned that she chose this drug because Fran had it when she was hospitalized with pnuemonia three years ago. She said she didn't want to waste time trying other treatments and that this one would clear it up right away. However it is a little scary! I think I'm going to take a nap now.

Can you taste the white chocolate a lot? Neither of us are huge white chocolate fans, so I was wanting to know before we try it!

I ended up not making the recipe last night. My SIL called me early yesterday morning to TELL ME, not ask me, that her 2 youngest kids (the destructive wonders) would be coming to my house after school until 9:00 last night. I was not prepared, and didn't have enough food purchased to feed 2 more tummies (that eat a LOT). So, I had to make something else. Don't get me wrong, I don't mind watching the kids, but I would have liked to have been ASKED, not dictated to. Grrr! It made me mad yesterday, and then when they showed up this morning at 6:00 with no warning, I returned to anger and have stayed there. Apparently, they are coming over after school today, as well. Color me ANGRY! I was not asked about today, at all! SIL has gone on a trip with her older kids (chaperoning the band), and dad is a music teacher 2 towns over. He doesn't get home until late each night. I'm really upset, because I bought tickets for me and the kids to go to a Disney concert at a local music school for tonight, and I don't know what time the kids will be picked up! I may just be dropping them off at their own house with no one there at 5:30. Serve them right!

Anyway, rant over, back to the thread. It's been a year since I made those dreamsicle cookies, but I can't remember them being overly "white chocolate-y." You could certainly cut back on the chips, if you want to!

We took Nola, Rielly, and Kady to McDonalds for the trick or treat night last night. I tried to bail on everyone because it was sleeting and snowing and just plain gross out. I did go but it was so nasty out and the trick or treating was to the local business also. Nothing like walking outside with the kids, and the cold and the rain:headache: I was so cold and wet when I got home.

Tonight I am babysitting Nola and Reilly for a few hours. Then I have to go to Target to get Kady a winter coat. Its still early for it, but tomorrow our area is expecting 8 INCHES OF SNOW!!! :sad1::sad2: I'm just not ready for this....

I will probably eat out tonight, and I have to hit the store for food for tomorrow.... FUN!!!

That sounds awesome... Have you tried the Titos tequila made there in Texas? We made Bloody Rita's out of it and it was awesome.... We can't find it here, but always pick some up while we are there...

The home health nurse is here working with Fran examining her. Soon he will hook her up to the IV and she has to drip for about an hour. We got up super early (for us) and then he was late. :headache: I am going to need a nap today.

Oh giiiiirl, no she di'int! I can understand you being very angry! That would have been enough to make me get a lot grumpy, and probably a little mouthy with my SIL...in the tactful, Southern-bell way that I do! ;)

It's Friday.

My lovely wife is cooking chicken piccata for dinner in the kitchen as we speak. And we'll be cozying down on this chilly weekend and watching movies all weekend!

So dinner tonight was pork schnitzel, roasted Brussels and baked sweet potato... All in all DH was very happy, he kept telling me how good it was and he cleaned his plate...

The temperature doesn't usually get below 60 here except in the middle of the night, so we rarely have to go outside in those nasty temps! The takout chinese was really good, I made it linner at around 4:30 so I'm getting hungry again. Her foot is looking much better, yesterday it was shiny and infected. Today it looks like a foot. She is one her second IV infusion and her area of infection is really going down. Whatever the Doc gave her is knocking it out of the park.

Today we are supposedly going to my dad's house for dinner. Not sure where we'll go if I don't ever get solid plans from him set. *sigh*

I went to the doctor and it's my sinuses again. I got a lovely shot of Decadron and some antibiotics and I'm feeling much better but I've almost completely lost my voice. Not good when I have a zillion singing obligations coming up in the next few weeks so I am VERY glad I went on to the doctor. *Sigh again* I think I picked this up from Chloe. She was still sick the other day when we were with them. It absolutely KILLS me that she doesn't keep her home when she's obviously sick, obviously miserable, and would obviously rather be at home with Mommy curled up in a rocking chair. :headache::headache::headache: But, like always, I'm not a parent and cannot give input.

Allison- I am so glad that the Dr chose the big guns for antibiotics. No use playing games with this infection! Please don't forget to care for yourself throughout this entire ordeal. You will be of no use to anyone if you collapse.

Glynis- You have shared some of the selfish actions of this gal before but this one takes the cake!!!!!!!!!!!!!!!Terrible!

Becky- we had snow here too and it is too early! We are preparing for this storm and I am not happy!

Vickie- I missed you!!!!!!!!!!!!!!!!!!!!!!!!!!!! And our own pool boy as well................

So the weekend is off to a rough start. Buddy was included in his class reunion even though he graduated from another school This class had a graduating class of 46. Anyway we had an informal gathering to get to last night but we needed to pick up his old dump truck from the garage. He had brake work done. He has duel wheels on the back and as he was driving home he felt a flat...........or so he thought. Then a tire passed him.................and then another! He said it was a miracle that no one got hurt, the tires followed the guardrails and crossed a busy intersection before stopping. He called the mechanic who thought he was teasing. No. So they came down and got the tires back on but he needs to get the truck back to them, some ring thing never got put back on.

He is working today but we are expecting a major storm and the forecasts are not looking good. I asked him to bring the generator home from the sheds, the trees have not shed their leaves so if the snow is as bad as it is predicted the limbs will fall on power lines.

Dinner is at teh country club where his reunion is being held. YUM!

Good Saturday morning everyone!

Today is Halloween in the Goofyluver/Uncle Remus household. We're having mummy dogs for dinner, cheesy worms (macaroni) and wrapped corpses (jalapeno poppers). :lmao:

And we're watching movies today and I have to earn a few CEU's online to keep up with my licensure.

I am so glad that the infection is getting better. It is a releif for you top i am positive.

Morning. Today is a really crazy day, so I'm stopping in early before things get too bad.

Allison - So glad Fran's foot is looking better. Sounds like the "last chance" antibiotics are doing their work! Hooray!!!

Lindsay - Take care of that voice, young lady!!! I'm so sorry you are not feeling well! It's hard, not to be able to give advice to a mother, when you know her child needs to be home! You get that all-dreaded comment "You don't know what you're talking about... you're not a mother!" I got it a lot before we had children. I always countered with "I may not have children, but I DO have common sense!"

She contacted me yesterday, mid-morning, to let me know that her oldest daughter would be coming to pick up the kids at 5:30. Ok, that's fine, our concert wasn't until an hour later, so all would be well. However, at noon, I was checking FB, and this oldest daughter's status mentioned that she was leaving for Las Vegas for the weekend. In a panic, I texted her asking who was picking up the kids. She told me she guessed it was her dad, since he was going to be the only driver home this weekend. I asked her if she knew, and she texted, "Not my problem." Then wouldn't respond to any more texts.

My BIL is a high school music teacher in a town that's about 45 minutes away. I hated to do it, but I ended up having to call his school, and get him out of class. I explained the problem, and he told me that he had been planning on staying late, since I had the kids, but he would leave at 4:00 to come home and get them. He was really apologetic, as he hadn't known his wife gave me wrong information. He got really angry at her, for the way she handled things, and promised me he would speak with her when she gets home tomorrow. We'll see. I really hate being taken for granted. When SIL gets back, she and I are going to have a little chat. I don't mind watching the kids, but there needs to be clear guidelines.

Last night's dinner was my wife's chicken piccata.

This recipe is based on a frozen chicken piccata she bought from Sam's one time, she deconstructed it, and now this is my favorite thing she makes. Most chicken piccatas don't have the tomatoes or artichokes, but we can't leave those out.

Chicken Piccata

Ingredients


3 chicken breasts, cubed
Italian seasoning
1 jar sundried tomato pesto
1 can diced tomatoes, slightly drained
1 can artichoke hearts, drained and separated into pieces
2 T capers (more or less to your liking)
Lemon juice for flavoring


Brown the chicken breasts in the italian seasoning. Add pesto, tomatoes, artichokes and capers and allow to simmer until it comes together. At the very end, add a small amount of lemon juice and taste. You can add more or less if it needs a bit more tartness. We serve this over rice.

AWESOME! I'm so glad it's showing results already. Do you have family support nearby? Take care of yourself - being a caregiver is hard work. Rely on others if you need to take a break :hug:

Darn. At least they are getting you some meds. My sinuses are out of control, too, but it's due to the season changing. Yuck!

I saw my doc on Thurs and my latest XRay was all clear! :cool1: Hoping I don't relapse this winter. He did say I likely have a cracked rib, I've been having a lot of pain, but there isn't anything to do for that really. I just use the heating pad a LOT right now.

Last night I made this mushroom spinach pesto lasagna that was AMAZING. Will post soon. Tonight I have a family get together that's just prior to dinner so we'll probably get something out after that.
 
This was delicious and SO EASY.

One-Pan Skillet Cookie
1 stick (8 tablespoons) butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon pure vanilla extract
1 egg
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup chocolate chunks

Preheat oven to 350 degrees. Melt butter in an 8 inch cast iron skillet set over medium-low heat. Stir in sugars and vanilla and remove from heat. Let rest until pan is warm, but no longer very hot, about 5 minutes.

Crack an egg onto the butter and sugar mixture, and use a fork to whisk it well into the mixture. Place flour, baking soda, and salt on top, and very carefully stir into the mixture until smooth and well-mixed. Stir in chocolate chunks. Place in the oven for 15 minutes, or until starting to turn golden on the top and around the edges, but soft in the center. Serve with vanilla ice cream.
 
Ladies - I just got a PM from Maria letting me know that they just found out that they lost one of the twins. She's pretty devastated. She wanted you all to know.
