The What's For Dinner Thread - March '11 (recipe index in OP)

Caili woke up today fine...no fever, no bellyache. The first thing she asked me was if she could go to her competition. She skated great. She looked strong, elegant and happy! She placed fourth out of five, which was not what most people watching were expecting, but Caili was happy and she had fun. I was most happy that Caili was feeling better!

The good news is that Kyle pitched again last night, 5 innings!! The coach told him after the game it was one of the best pitching performances of the year

Yay! I am so glad Kyle is doing well. Please let him know that we are rooting for him.

I am trying to out wit a headache that I woke up with but so far the headache is winning. I am going to bring out the big guns in a minute.

I hope you are feeling better.

Today our neighbor night group celebrated Rylee's 1st birthday.

Dinner tonight was leftovers for me, a piece of toast for Caili and Liam had a burger at my parents' house.
 
Sad isn't it? It must be all the drugs I am taking for this blasted headache.

We met some friends for dinner at a local Italian place - really tasty. He had picked up Sprinkles cupcakes earlier today so we split each cupcake in fourths and had a sampling. I've never had the famous Sprinkles cupcakes but thought they were tasty!

They were good? I was so looking forward to a cupcake at Magnolia bakery and both DH and I thought they were pretty awful. $5 for each and dry as a bone :confused3

I am not at all sure what I am going to cook today. Buddy is helping a friend seed so he will be gone until this afternoon. I will head to the grocery store and take it from there.


I am waiting to hear from teh girls this morning. I think there was a plan to join DOnny and company at Cracker Barrel for breakfast but I am not sure. If there was I want to shop in the gift store, the little girl down the street is having her birthday and buddy wants me to pick up a gift. She thinks he hung the moon and will sometimes run over to chat with me. And she can talk :woohoo::rotfl2:

WFD - Johnny has been begging for PW's braised short ribs. I made them yesterday so I can skim the fat so we'll be having that with either polenta or mashed potatoes and collard greens. This will be the last "heavy/comfort" style meal of the season, we need to start eating lighter!

I have to get grading papers, but I do have dinner in the oven and I'll give you my "special" recipe. My guys LOVE this. If you like pork, you'll want to try this sometime.
Question: Does someone add the recipe to the index?


WFD: salad, A-1 pork roast, mashed potatoes, mixed vegetables


Recipe:
A-1 Pork Roast
  • 1 boneless pork roast 3-6lbs.
  • 1 can cream of mushroom soup (low sodium)
  • 1/2 sm. or med. bottle of A-1 Steak sauce
  • 3-4 cloves garlic, pressed
  • Basil, several leaves chopped, or shake the dried to your liking
  • black pepper, to your liking
Set roast in foil (enough foil to seal all the way around. I use 3 big pieces) in a baking dish.
Pour cream of mushroom soup and A-1 over pork. Press garlic over top and sprinkle with basil and pepper.
Do not add any salt! It is naturally salty.
Heat in oven at 300 degrees at least 4 hours. 6-7+ hours is better!
**Be sure to seal foil when put in oven. If there isn't enough foil, it will leak into the dish.

WFD is some beef I made yesterday in the crockpot.
Beef tips
3 lb beef stew meat cut in cubes
1 can cream of mushroom soup
1 envelope onion soup mix
8 oz beef broth

cook for 5-6 hours on low

It doesn't have a special name I found it on the Tasty Kitchen side of PW. I snatched a piece last night it was really good.

We will have that with either noodles or mashed potatoes and asparagus.

Nancy Rylee is a year old already? WOW where does the time go?

They weren't anything to write home about but they were moist and flavorful. I thought they were pretty sweet, myself, but I'm not a big sweets person anyways.

I don't get it... I posted yesterday but it is gone? Oh well, rest assured I said nice positive things! :rotfl:

DS and DH have been out of town all day, it is Michigan State Championships for Color Guard and Drumline competition. DS's drumline team got 4th out of 11 in their division so not too bad. All top 4 teams were within just 2 points of each other! :dance3: They are on their way home, want dinner not fast food so I will be cooking late.

WFDT late = pan seared steak with soy marinade, steamed rice, sliced strawberries, carrots and dip.


I have noticed a lot of you ladies cook recipes from Pioneer Woman... I must admit at first I thought "PW" meant Pei Wei because I saw it with "sesame noodles" :lmao: Recently I read her book and made the connection and found her blog. It is good to laugh at yourself.

:woohoo::cheer2::cheer2: We went to see harry Potter this afternoon and i ate a gynormous bag of popcorn with butter. I am so not hungry. Buddy said he is nto hungry so I may end up changing my hot dog with nothing to saandwiches.............I cannot even think about food :sad2:

Dinner today was pan-seared sole with mango salsa, pineapple fried rice and green beans. It was really tasty.

Oh, I would think it could be done in a crockpot, just keep the lid on. That is tough at our house!

Aimee, I have to say that if DH did that he would be chopped up into pieces and put in the freezer!! We don't switch cars well. He has a little altima and I feel like I am sitting on the floor. He hates my truck because he took it one day and smashed it up and it had $12K in damage. :headache: I had only had it 4 months!! So if he took it again, i would shoot him!!! :rotfl2:

DH thawed out some meat from the freezer and turns out it was a slab of bacon. Any idea what I should do with it? I dont mind making soup, or beans, but hopefully you guys have some ideas. Its about 1 - 1/2 pounds and its yucky weather, so comfort food ideas would be nice!!

Kathy, congratulations on Kyle's win! Hope he is OK flying through the weather today. I hate when the flights are turbulent.

Marisa, hmmmm....that is a lot of bacon. Can you refreeze some of it? I can't think of anything that would use that much all at once. Unless you sliced it up and cooked it all and then used it in different recipes during the week?

Morning everyone!! I will be back later to catch up with everyone after I get the Sanctuary all set. until then . . . . . .

Thirty years ago today I married my best friend. Here's to 30 more - God willing!!!

Well what a fun weekend we have had. We all met for dinner on Friday night. Minus Matthew - but he called during dinner. The kids gave us a beautiful family picture of them. We LOVE it!! How they all got together with us not even realizing it is a miracle. WOW, it blew us away and is so neat. I can't wait to get it hung now. Just awesome!!

On Saturday Doug and I painted the living room all day. We headed back to Kearney for dinner and some more paint and new floor registers.

Sunday we went to church then to Grand Island to the Horse Races. We love to go to them and usually do it once a year. We didn't do real great, but we did have a LOT of fun. Afterwards we had a nice dinner at Red Lobster.

We had a very nice Anniversary weekend. I start my Zumba class tonight so we will eat at home.

WFDT ~ Steaks, baked potatoes, grilled apsergraus and fresh strawberries.

Marisa, the Pioneer Woman has a recipe for ranch chicken that looks good. I made a cobb salad a couple weeks ago and the family loved it.

Kat, I am sure Kyle will be fine. I was a wreck yesterday as Andrew was flying through a lightening storm. So glad they won over the weekend.



I will be back later to catch up. I have to get Thomas down for a nap. He is all over the place lately. He fell earlier and scraped his face. He new thing, that someone in my house that will remain nameless, taught him is to make a raspberry noise and say, "I farted!". Nice. Let's see how that goes over the next time we go grocery shopping! :rotfl2: Anything to drive me nuts! Now he is playing his guitar...at least it is one that plays cool music...The Police, U2, B52s , etc. Great! We just added his recorder to the mix.

Wanted to share this awesome meatball recipe. It is the best ever!

RAO's Meatballs

1 pound ground lean beef
½ pound ground veal
½ pound ground pork
2 large eggs
1 cup freshly grated Pecorino Romano cheese
1 ½ tablespoons chopped Italian parsley
2 garlic clove, peeled and minced
1 small grated onion
2 cups bread crumbs (see below+)
2 cups lukewarm water (I only used 1.5)
Salt (preferably Kosher or Sea Salt) and freshly ground pepper to taste
1 cup fine-quality olive oil

Combine beef, veal, and pork in a large bowl. Add eggs, cheese, parsley, garlic and salt and pepper to taste. Using your hands, blend ingredients together. Blend bread crumbs into meat mixture. Slowly add water, 1 cup at a time, until the mixture is quite moist.
Shape meat mixture into balls.

***Heat oil in a large sauté pan. When oil is very hot but not smoking, fry meatballs in batches. When bottom half of meatball is very brown and slightly crisp turn and cook top half. Remove from heat and drain on paper towels.

***I baked mine at 350 for 30 minutes and then added to sauce.

Lower cooked meatballs into simmering Marinara Sauce (see Salsa Marinara Rao's) or Sunday Gravy (see Rao's Sunday Gravy) and cook for 15 minutes. Serve over pasta or on their own.

+Breadcrumbs (I used homemade and it made a world of difference): for Rao's style breadcrumbs, be sure to make your own. Using the highest quality Itallian bread you can find, allow it to dry for at least two days. Then, grate, using a handheld grater or a food processor fitted with the metal blade. Shake and push the bread crumbs through a medium strainer to get an even texture.

Note: In place of breadcrumbs, you can use stale Italian bread, white part only, which has been lightly soaked in lukewarm water.
