WFDT? Carne mechada with rice and black beans, and tostones:

I'm licking my screen right now.

Where's the recipe???? That carne mercada looks delish!

Can someone give me the scoop on the Aldi chicken sandwiches that taste like Chick-Fil-A? I have searched the boards but can't seem to locate the stinkin' info on it!

I shop Aldi all the time, but apparently I'm missing out on these! I am going shopping today and may want to add these to my list! :) Thanks!

I heard about these on a Dave Ramsy board. They are in a frozen bag, cost about $5.50 for 8-9 huge pieces and taste just like Chik Fil A sandwiches! I was skeptical at first, if you google Dave Ramsey Aldi Chik Fil A I think the reviews will come up, they are really really good!

WFDT?

We're going to do pita bread pizza. It's easy and neither DH nor I want to think of an alternative.

Hope everyone had a great weekend.

It's Monday morning over here. Where did the weekend go?

Nothing much to report other than it's hot and probably as humid as Florida in November. We're expecting a change in the weather today. Can't wait!

WFDT? Home made burgers.

We ended up with rain in the early afternoon today. It was accompanied with thunder and lightning. Seems like some parts of Melbourne were hit with power outages. Thankfully, we were fine.
And the burgers were delish!

Have a great Monday everyone.

I found them! They are REALLY good! My daughter who is Ms. Picky ate two! We added mayo, and pickles and they really did taste like Chick-Fil-A! :) Those are keepers! Thanks for the suggestion!

I don't know where all my time us going! It seems I spend my life shopping and preparing food for this crazy diet. I hope everyone had a good weekend. My Friday night dinner was postponed to Saturday due to an impromptu trip to DL. I'll be back with last night's dinner.

Tonight is bacon wrapped flank steaks, artichokes and Cole slaw.

Tonight we're having individual sized chicken pot pies. I'm a sucker for ramekins and little casserole dishes.

I don't remember whether Pioneer Woman weekend was supposed to be this past weekend or next, but I'm covered either way. So last night's dinner was pork chops and Texas Caviar. I made the Texas Caviar the day before as the recipe suggested. My starting ingredients

  • 15-ounce can black-eyed peas, drained and rinsed
  • 1/8 red onion, finely chopped
  • 1/8 cup roughly chopped fresh parsley
  • 1/8 cup red wine vinegar
  • 1 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 plum tomatoes, seeded and chopped
  • 1/2 small red bell pepper, seeded and finely chopped
  • 1/2 green pepper chopped
  • Dash Tabasco
  • Kosher salt and freshly ground black pepper
  • Tortilla chips, for serving
I chopped up all the ingredients as suggested.

When I made the recipe I was missing the green pepper, so I added that the next day after a trip to the store. It actually called for jalapeño, but we are wimps when it comes to spicy heat.

Rinse and drain the black Eyed peas.

Combine the black-eyed peas, red onions, parsley, vinegar, oil, garlic, tomatoes, bell peppers and hot sauce in a bowl. Season with salt and pepper.

Cover with plastic wrap and refrigerate at least 3 hours and up to 24 hours. Serve with tortilla chips. Since I'm really not supposed to have Tortilla chips, I found these flaxseed chips and they weren't half bad! My dinner!

Alison - YUM!

Kimmar - I wish I was that lucky too.

Just a reminder about cooking something that the Pioneer Woman would cook this weekend!

I thought you said you did? I have to write mine up and attach pictures!
