If I was making the new resort, I would have Little Mermaid, Lion King, Snow White and Toy Story as themes. I don't think Cars and Finding Nemo did much to actually change animation like those 4 did.

Snow White - First full-length animated movie (well, not really... But close enough!)
Little Mermaid - Credited as the start of the animation renaissance at Disney.
Toy Story - First full-length 3D animated movie.
