The Popular Onboard Activities

Which adult onboard activities are the most difficult to get? In other words, which ones to I need to sign up for as soon as my window opens? We are a group of 5 adults only so I'm not interested in kids' activities.
 
Spa stuff on sea days. Spa stuff fills up on sea days because it's a sea day and people have the extra time. Spa is wide open on port days for obvious reasons. Also, brunches at Palo and Remi fill up on sea days as well for the same reason.
 
If you can’t book in advance, there are always openings available once you board. Just be sure to board early and get in line. They usually have a table outside of one of the main dining rooms. I had no problem getting a Palo Brunch reservation on my first 4-night, but I was near the front of the line.

You don't need reservations/tickets for most of the activities listed in the Navigator
 
Out of curiosity, do you know of any adult activities on the ships? I haven’t cruised in a while, so I’d love to think there is more to do than they offered in the past.

Unfortunately there's not much - trivia, Match Your Mate, some adult only performances by the variety acts, etc. The ship mostly shuts down at midnight. I always thought there were a lot of adult only activities until my kids got older and I was looking for stuff to do without them.
 
As others listed above, the Palo brunches and mixology classes fill up quickly (esp the chocolate one!)
To that I'd add - if you want to do a Princess meet & greet, or any of the ticketed character meets those ticketed events also go quickly. Not sure if they're still doing those with covid around, probably not. But in normal times you'd want to grab those sooner.
 
Another adult-only thing that books up quickly, and I'd normally say don't even bother trying, but with bookings down maybe it'll be easier to get: Serenity Bay cabanas.
