Jenny- if you stop by, I am so sorry that Ed had a setback. I'm sure that the attention he can get in the ICU is better for him, but nerve wracking for you. Your family has a powerful prayer chain surrounding them.

We found the cause and he is getting better..It's high levels of ammonia,all related to the kidney failure..
Anyhow, Last night I ended up making Slopy Joes and cheese fries..Today I'm making the roast I was going to make yesterday along with mexican rice and either broccoli or spinach.
 
Tonight I am making my chicken pot pie (I ended up serving the ricotta gnocchi, salad, and garlic bread last night). I still don't have any puff pastry, so am atempting a biscuit crust. We shall see...
 

Here's the recipe from last night.

Easy Skillet Chicken

1 egg
1/4 C. bread crumbs
1/2 tsp. seasoned salt
1/8 tsp. pepper
4 boneless skinless chicken breast halves
1 can stewed tomatoes, undrained (14.5 oz.)
1/4 C. chili sauce
1 Tbs. brown sugar
3 Tbs. Dijon mustard

Beat egg in shallow bowl. In another shallow bowl combine bread crumbs, seasoned salt and pepper; mix well. Dip chicken in egg; coat well with crumb mixture. In large skillet coated with Pam, cook chicken 2-3 minutes per side or until browned. In medium bowl, combine all remaining ingredients; mix well. Pour over chicken in skillet. Reduce heat to medium-low; cover and cook 10-15 minutes or until juices run clear, stirring sauce mixture and turning chicken once. Serve chicken with sauce.

And, yes, I'm sure you could do this with tomato sauce, or pureed tomatoes if you don't like the chunks.

We are having speghetti and meatballs, salad and bread. Pretty easy night for me too since the sauce and meatballs are defrosting now!

The Ritz Parmesan chicken went over really well last night so I've added that to our meal rotation. YAY!! My co-worker always tells me to try the recipe first and then let her know if it is a keeper or not. This one definitely is!

We just had steak on Wednesday but we'll probably have it again tonight unless I can talk everyone out of it. There is a really inexpensive steak place here that is only open on Friday nights, it's really an Eagles Lodge. We can go eat steak, potato (your choice of baked or FF), and all you can eat beans (butter or pinto), salad and garlic bread for $27 for 6 of us. This is the last Friday before Lent starts so I don't think I'll be able to talk them out of it. If I can, we'll have a big pot of chili here at home instead. I'll make cornbread and the kids will probably make frito pies out of it.

Glynis, congrats on the new baby coming to your family.

Tonight we are having pork chops, baked beans, and herbed rice. Dessert is caramel cake.
 
Gynis, I was reading your funeral potatoes recipe and I have a question. What is a cube of butter? Is it a stick or is it the whipped kind you buy in a box?

No cooking for me today, just got back from the doctor. My 2nd UTI in less than two months. Doctor says the stress I've been under has shot my immune system. Isn't that lovely?:rolleyes: DH will pick up dinner at this great little place near where he works - blackened redfish, sweet potato fries and grilled artichoke - YUM!!
 
I am back to cooking tonight. We were in Seattle for a long weekend to visit friends - I made beef stew Wed night and all it needs is heating up and I will make some biscuits also.

tommorrow we are going to Outback with friends- have not been there in months and am so looking forward to it
 
DS had so much homework (that I had to help with) last night that I didn't have time to make dinner. I sent DH to McDonalds. So we're having what we were supposed to have last night - teriyaki grilled pork chops, rice, broccoli and eggrolls. The pork chops have been marinating since yesterday morning so they should be really good.

Just one stick. Sorry. I copied the recipe from my grandmother, and that's the wording she used.
 
We ended up not having the rice dish from last night, DH was in late at work again. He's a cameraman for our local news station, and has been covering a story that's huge news here. If you watch the Today show, you've seen it. An 18 year old walked into one of our shopping malls and opened fire, killing 5 and wounding several others. It's really been a big story, and Alan has been late at work since it happened. The first of the funerals start today, so he'll be doing that for the next week or so. It's just really sad.

So, today I'll make the barbecue rice dish and the kids and I will have that.

I thought of you when I heard this sad story because whenever I see anything about Utah on the news I remember that Glynis lives there. I often wonder what these kids are thinking when they go so far off the path.....:sad2:
