The natural state! I was just looking into stopping by this "slow food" diner up in Barre , VT this foliage season - the Farmer's Diner - that features the archetypal American diner menu but their goal is to use I think up to 50% locally grown or raised foods...the owner had to buy his own meat processing plant for the cheeseburgers.
