I find Disney to be "unexotic" although I love to eat there. Restaurant Marrakesh in Morrocco would be an idea (though the food isn't terribly exotic). Sushi at Kimono's, California Grill, or Matsunoma Lounge. Jiko, Boma or Ohana. Artist's Point - while not "exotic" does generally offer some American wild game (which may be exotic to people coming from outside the US - buffalo, venison, rabbit, pheasant - come to think of it, its fairly exotic to most people within the US, we don't eat a lot of rabbit here). California Grill isn't exotic, but provides for interesting taste combinations and beautiful presentation.
Disney does do theme well. Great "theme" restaurants include the Coral Reef in Epcot (eat with fishes), Sci Fi Diner, 50s Prime Time Cafe (both in MGM), Rainforest Cafe (DTD or AK). The food at these places isn't "exotic" but the atmophere is.
Where are you coming from? Obviously, the Biergarten isn't going to be exotic to anyone coming from Germany, but may be right up your alley if you are coming from Japan (unless Japan has a lot more German restaurants than I imagine it having). Likewise, Jiko - possibly the most exotic choice for American's - is not going to seem terribly exotic to someone coming from South Africa.
