Hmmm I'd skip the curry but the rest sound delicious. So they did not allow photos huh?
.

I actually didn't ask. They've just come back from Europe and had 2 albums of photos to go through and a newly minted DVD that he finished compiling that day to share. We spent the time around the kitchen table slurping soup out of mugs and enjoying the pictures and then glued to the TV whilst eating the curry and dessert off our laps. It's nice to have beautifully plated food....but last night was more my style.

How was the pumpkin soup?

It was lovely. But it was a super cold night and it wasn't quite hot enough.....or was that because we left them sitting in the mugs for over 10 minutes whilst we oogled over their Italian photos? :rolleyes1

As I write this (on a short break), we are going through the complete mess of boxes this lady deemed "only appropriate for donation" and repackaging them I'm a manageable fashion. We are taking out such things that we think might be still garage saleable and boxing neatly (as opposed to tossed half hazardly)those things we will take to a thrift store. So far we have about 1/3 a load ready to go and a mountain of hastily packed boxes. Ugh!

Are you EVER going to be done???

Yeah, pretty much :) I'm going out for a while with my best friend :yay:

Hope you have a good time.

Seafood Chowder

My starting ingredients:

2011August06ScavengerHunt044.jpg

  • Clams, 1 – 2 lbs
  • Crab, 1 (optional)
  • Shrimp, 6
  • Potatoes, 3 medium sized
  • Corn, 2 cobs
  • Celery, 3 sticks
  • Onion, 1 medium
  • Carrots, 2 medium
  • Oil, 1 tablespoon (or butter)
  • Plain flour, 2 tablespoon
  • Fish stock, 2 cups
  • Milk, 1 – 2 cups
  • Tumeric, ½ - 1 teaspoon (optional)
  • Dill, 1 heaped teaspoon
  • Salt and Pepper to taste

Wash clams well and place in a pot with about ½ cup of fish stock. When stock is boiling, reduce heat to medium/low to achieve a moderate simmer. Cover and allow to steam.

2011August06ScavengerHunt048.jpg

Steam the clams for about 8 minutes, until the shells open. If you have green shrimp, place the shrimp into the pot at this stage and cover. After about 2 minutes, turn off the heat. Do not open the pot and allow the seafood to steam for another 5 minutes.

2011August06ScavengerHunt051.jpg

In the meantime, finely dice the onion, carrots and celery.

2011August06ScavengerHunt052.jpg

Peel and chop the potatoes and remove the corn kernels from the cobs.

2011August06ScavengerHunt053.jpg

In a large soup pot, fry the onion, carrots and celery in some oil or butter for about 3 minutes.

2011August06ScavengerHunt056.jpg

Add the flour….

2011August06ScavengerHunt058.jpg

…and fry for another 2 – 3 minutes, ensuring that the flour does not burn and that all the vegetables are well coated.

2011August06ScavengerHunt059.jpg

Add the stock and milk and still well to ensure that the liquid mixes in without any lumps. Add the stock used to steam the clams and shrimp to the pot as well for extra flavour. Add the corn and potatoes and heat to simmering for about 10 minutes.

2011August06ScavengerHunt062.jpg

Season with tumeric (optional – I wanted the based to be a Yellow colour), salt, pepper and the dill. Allow to simmer for another 5 minutes.

2011August06ScavengerHunt064.jpg

Whilst the stock is simmering, remove the clam meat from the shells. Only use the meat from shells that have opened. For any that are still closed, discard and do not use.

Peel the shrimp and remove the middle vein.

Roughly shop the seafood meat.

Remove the meat from the crab (if you are using it…it is strictly optional and unnecessary).

2011August06ScavengerHunt065.jpg

Add the seafood meat to the stock and cook for another 3 – 5 minutes.

My lunch!

Junking? You don't think a second hand store will take the clothing?

That's what I mean by "junking" them. We just got back from our first trip to the Goodwill.

Are you EVER going to be done???

.

Lord I hope so!!!!!!!!!!

Seems this lady who will come take EVERYTHING and leave your house clean was too good to be true. She really only wants the stuff she can sell in a garage sale. She went through stuff last night and left a jumbled pile of boxes in the Living room and started whining about how she would need a truck to take the stuff to the thrift store, and she couldn't afford to spend money since she was just doing us a favor and yadda, yadda, yadda. Just shut up lady, take what you want and we'll finish it up without your whining! :lmao:

Running in and out for dinner.

Lou - glad to see that there are no steak knives involved.....yet. :teeth:
I'm sure it will work out fine with your mum and here's to a quick countdown.

I just need to keep her from taking over the itinerary.... :rolleyes1

I like the look of the chowder....especially seeing the crab :rotfl2:
DBF has a severe fear of crabs. Even dead ones. Childhood trauma :upsidedow
So fun mocking him over it :rolleyes1

So sorry all you have to do Alison. There is still a light at the end of the tunnel though

PIO the chowder looks great, however, the thought of cooking right now is :faint: Looks like we're ordering Thai tonight.

Lou, good luck with mom & DBF! At least there are no steak knives involved!

Ugh, I'm hoping we will wrap it up tomorrow. However there is a ton of stuff in the garage to go through, but the house is getting there.

Alison - get some rest. No point having a staycation if you just come back to the same old, same old.

I know, it's like that one day of rest was just to get me through the last two and what's to come! :rotfl:

Waiting for Thai food to arrive. Once the place is cleaned out, I get several days of being a slug at home! However, tomorrow we're driving up to Tulare and back on Tuesday. :rotfl2: It never ends! I hope we get most of it wrapped up tomorrow :rolleyes1

I hope you get things done tomorrow.

I'm looking up recipes for Thai Fish cakes....:rolleyes1

Chowder looks good, I think if you told me it was just clam or just shrimp I could of eaten it. But like Queenie's DBF and his fear of crab, a bunch of seafood is not for me.

I am fine. How is everyone? Just think Alison it will end at some point.

Doing alright. I was at the soccer field with a friend. Passing a little shooting goals. And just before leaving somthing went wrong in my knee. It doesn't feel bad, but I have a fear that I'll take an odd step and finish is off with a snap.

That seafood chowder recipe is a keeper. I'm going to omit the crab next time. I only included it because I needed something that was clambake related. The crab was cheaper than lobster! :rotfl:

Hope your knee recovers overnight. Is it swollen? If so, then icepack. If not, then maybe a heat pack might help.

You certainly don't want to snap something in there....the ball and socket joint in there is the worst engineered component in the whole body!

Got Gold?

I wish! At close on $1700 an ounce....it's buy...sell....buy.....sell....who knows? Markets are probably in for another bumpy ride on Monday. Don't think that Moody's downgrading the US rating from AAA to AA+ is going to do anything other than cause more traders to sell!
