Good Morning everyone!

Yesterday, I made 12 (complex) halloween cards, and cut 12 Christmas cards. Came home at 8 pm, I was wiped. The girls did a good job - we had a cold cut platter and salad for lunch and ziti & meatballs for dinner. We got tickets for signing up, pages complete, treat brought to share, albums brought to show, cards complete , etc, which we were able to then put in the bucket for the items we wanted to win. I think it made everyone quite productive, lol. I won the autumn leaves punch - put ALL my tickets in the same bin, lol. Felt like I got my $40 worth, and was home in 20 minutes. But . . . I'd have given it all up to be cropping with my DIS peeps.

Today, I will
make breakfast
gym and pool (so stiff)
on line banking
prepare lunch
make applesauce
do my photopass upload
email my cruise mates
make dinner
work on cards
bed

Happy Day, All!

Amazing Race tonight!

Have a great day :)

I'm finally feeling a bit more human today. Asleep at 8:00 last night, and didn't get up until almost 8:00. Lounged around a bit and then went to Friendly's for lunch.

I have to work tomorrow, but I'm hoping to just go in for a few hours. I'd love to go pumpkin picking.

Hope everyone is having a good day!

This recipe is from the Poineer Woman cooking site... I cut back on the butter and the sugar. It's yummy :goodvibes

Apple Cake in an Iron Skillet
Added by Ree on September 29, 2009 in Cakes, Desserts

Prep Time 25 Minutes
Cook Time 25 Minutes Servings 8 Difficulty Intermediate

Ingredients
4 whole To 5 Whole Granny Smith Apples, Peeled, Cored, And Cut Into Six Equal Pieces
1-¾ stick Butter
¾ cups Sugar
_____
FOR THE CAKE:
1 stick Butter
⅔ cups Sugar
1-½ teaspoon Vanilla
2 whole Large Eggs
½ cups Sour Cream
1-½ cup All-purpose Flour
1-½ teaspoon Baking Powder
1 teaspoon Salt
½ teaspoons Cinnamon
1 whole Small Granny Smith Apple, Peeled, Cored, And Chopped Finely
Preparation Instructions
Preheat oven to 375 degrees.

In a 9 to 10-inch skillet, melt 1 3/4 sticks butter over low heat. Add 3/4 cup sugar to the pan and stir around, then place apple slices, wedge side down, in the pan. Don’t pack them too tightly, but try not to leave overly large gaps. Allow this to cook over low/medium-low heat while you make the cake batter.

In the bowl of an electric mixer, beat 1 stick of butter and 2/3 cup sugar until light and fluffy. Mix in vanilla and eggs. Add sour cream and mix well. Gradually add flour mixture until just combined. Gently stir in 1 chopped apple.

Remove skillet from heat. Spoon batter over the top, then spread gently so batter is evenly distributed. Bake for 20 to 25 minutes, or until cake is golden brown and bubbly. Allow cake to sit in skillet for five minutes, then invert onto a serving plate. Don’t worry if some of the topping isn’t perfect—it’ll taste perfect!

Serve warm with vanilla ice cream.
