The Coral Reef and 1900 Park Fare...

Does the Coral Reef count as one or two with the Dining Plan. reading the restaurant guide on Disneyworld official page it says only one... but last year it was 2. Did it change?

Does 1900 have Cinderella for dinner?

I can't answer your dining credit question, but I do know that 1900 Park Fare has Cinderella, Prince Charming, Suzy, Perla and the Godmother is usually in the lobby. When we went Prince Charming was not there and Wendy was there instead.

It has changed to 1 credit early this year I believe, thank god I only wanted to do i SD so i picked CG but I really wanted to try coral reef, now I can!
