Thanksgiving week at HH questions

We just booked a last minute surprise trip to HH for the few days before Thanksgiving. We're actually checking out on Wednesday so I can get home and get ready for turkey day. We've been to HH before, but always over MLK weekend in Jan because of cast discount. This time we are traveling with just immediate family, myself, DH (who will be turning 32 while there), DS 9 & DS4. I was surprised to see that there weren't many available reservations. I thought it was an off season. In Jan, it's pretty empty. What is the weather like that time of year? What are some "must do/must see" things? Best restaurants for families? Any advice/info is greatly appreciated!
