What is more likely to have next day FP availability for 7 ppl?

or
Soarin' at 5PM

For 7? Probably neither. You may have to break into 4 and 3, or even smaller. Then, I'd say Soarin' is a little easier, but not by a ton...neither are exceptionally hard for smaller groups.

I usually don't book tt anytime except morning during the summer and early fall. Too many afternoon rains that shut the ride down and when back up the line gets crazy long fast.

For 7 people right now I can get Soarin anytime after 5:30 tomorrow. Nothing for test track tomorrow.

Both rides usually have shorter standby lines by mid to late afternoon after World Showcase has opened. Getting FPs for 7 for either ride still may be a challenge. You may have better luck trying smaller groups and overlapping the FP times.
