minkydog - I know you just spent some time in NOLA, but know that the Carnival Triumph (IIRC) will be returning here with 7 day Eastern & Western itineraries begining in November.
I also echo the suggestions of the Cruise Critic boards. They're set up a lot like these, so you'll feel comfortable right away.
I wish I could volunteer more specific information, but DH & I have only been once. My boys are asking to go, so I need to get serious about planning a second trip.
