We have done pretty much all of the above. The biggest hit we ever had was fruit salsa and cinnamon nachos.
The salsa is easy, just chop up strawberries and kiwis, and a little oj and blend very lightly. The nachos are easy, too. Cut tortillas in 8 triangles, brush with melted butter, sprinkle w/cinnamon and sugar and bake at 350 for about 8 minutes. I also brought in plain yogurt to use as mock sour cream. Huge hit with the 4 and 5 year olds at DS preschool.
