OOh, I think I'll try those cake mix ones!
I have to make 50 dozen total, 3 different cookies (16.6 dozen of each) so I'm always looking for something new, easy, and cheap!
One of the ones I make will be this one - don't be put off by the refrigeration part. I like making the dough, then getting the kitchen cleaned up while it gets cold. Or you can make the dough a day or two ahead, then bake them when you have time. Also, for the family I take the time to roll them in sprinkles, but for 16 dozen, I just skip that part.

It does make them look pretty, though. I like to place them on a tray alternating the red and green ones. It looks a LOT more festive than the effort it takes to make them. Also, you can obviously use any colors you want, it doesn't have to be red and green.
Kaleidoscope Cookies
1 cup butter
1 1/2 cups sugar
1 1/2 tsps baking powder
1 egg
1 tsp vanilla extract
2 1/2 cups flour, all-purpose
1/4 tsp peppermint extract
food coloring
colored sprinkles
In a large mixing bowl, cream butter and sugar.
Add egg, vanilla, baking powder, and flavorings.
Beat in as much of the flour as you can with the mixer
Stir in any remaining flour with a wooden spoon
Divide into 2 portions.
Add green food coloring to one portion; mix till combined and set aside
Add red food coloring to one portion; mix till combined and set aside
Roll colored dough into logs; roll logs in colored sprinkles. Wrap in plastic wrap and chill in refrigerator for at least 1-2 hours.
Slice rolls into 1/4-inch thick slices
Place on ungreased cookie sheet
Bake in a 375ºF oven about 8 minutes - they should not brown
Remove cookies; cool on wire racks
