Tacos for company tonight.

So tonight, we are having some neighbors over for tacos.

We are having chips and salsa,

Tacos, and a "chicken-cheesy chilada bake"

For tacos -
I'm thinking:
Taco meat (ground beef)
soft shells
hard shells
salsa
cheese
sour cream
guacomole
lettuce
black olives
onions
tomotoes

Spanish rice.

Someone else is bringing dessert.



No margaritas (one of the families is religiously opposed to alcohol - so just not going there tonight), So to drink, we'll probably have lemonade, water and milk.

Do I need anything else???

Sounds awesome! Can you post the recipe for the chicken chilada bake?

ETA...who else is craving tacos now?
 
I like taco sauce not salsa on my tacos. You could also get some fresh cilantro I love that on my tacos.
 


I'm on the fence about this. I like black beans when I go to Qdoba, DH doesn't.

There are beans in the 'chilada bake, so we sort of figured that would cover us.

I'll post the cheesy chilada bake recipe later...like tonight or tomorrow. We need to clean and go shopping this afternoon!
 
(I assume no vegetarians are coming. If any are, it should be noted that several companies make a good ground beef substitute for vegetarians. With taco meat seasoned as it should be for tacos, there is almost no way to tell the difference between the veggie crumbles and actual animal meat. FWIW.)

yep I agree with this. and actually this is what we are having for dinner.
I use the morningstar crumbles and season them myself, and mix some black beans in too.
then all the other taco fixings
 
I actually do a stir-fry when we are expecting friends over who are vegetarian. They seem to like it, and it is easy to do it with meat and without.

Thanks for suggesting the vegetarian options - we do consider that when we have friends over.
 
Something cool I found is (and I don't know what it's called) for a dip:

Refried Beans line the bottom
add a mixture of sour cream/salsa
add grated cheese
top with black olives

(i think the original recipe calls for green onions, but I can't stand those so I always leave that out)
 
We always have refries on the side but maybe that's a Texan thing. I love a good pico de gallo too but it's certainly not a requirement.
 
I'm not sure that I would personally do (specifically) a taco dinner party. For me, if it was a sit-down, I'd rather go a bit further and do fajitas, and if it was something more casual, I'd be concerned about taco shells breaking and taco meat getting all over the floor :) so I think maybe I'd do make-your-own burritos instead.
 
Sounds yummy until the milk. I think just threw up in my mouth a little bit. Other that that, sounds great.
 
Maybe make some tea, a flavored drink, or even koolaid for the kids, I don't know any one that drinks milk with their dinner. Yuck. Or you can try to find some mexican coke/pepsi bottles. Or Pepsi Throwback would be the closest thing.

I'd add a bit of cilantro, it's in everything mexican. Beans are a big part of everything, but you won't find black beans around here, it's all pinto beans (whole or refried).
 
If I were your guests, I'd want a soda. I'd also want some refried beans but black beans sound good as long as you stir a little cumin into them when you heat them. mmmmmmmmm!
