Taco help needed

I need a meal to feed 10 big eaters next weekend and decided that tacos would be the easiest. I am going to make ground beef and shredded chicken filling (everyone eats meat). I thought of doing soft flour tortillas, hard corn taco shells and tortilla chips.
I need some help with toppings. So far on my list I have the basics: sour cream, lettuce, onions, cheese, salsa, and tomatoes. What am I missing? Any ideas for side dishes? We will be camping so I am trying to stick to easy to make things.

For sides, I would suggest some sort of yellow rice dish.
 
Sounds great. You could include guacamole as a topping, and perhaps serve papaya chunks (w/a little lime juice on top) as a side dish.

Other then that, everything you have listed sounds good!
 
YOu could have refried beans or black beans as a side.
We love those.
 
Rice & beans for sides. & don't forget the avacado for topping. Everything else you have sounds really good too!
 
I also second the guacamole idea.

We've done tacos for groups as large as about 30 people. It's a great thing to serve. I realize your camping - so crock pots are probably not an option! At home, we usually have one of chicken and one crock pot of beef taco meat.

Our local grocery stores sell the bags of "lettuce shreds" near where they sell the prepackaged salads. Saves a ton of time!

Mexican Rice and maybe some other smooth taco sauce with out the chunks(I don't like chunks!!!) and different flavors like mild,medium and hot.
 
Some grocery stores carry taco seasoning in "bulk" canisters -- much cheaper than buying the individual envelopes. Look for it in the Mexican Food section.
 
Get lots of chips and salsa as well as the "Queso" for dipping. And heck you can't for get the MARGARITAS!
 
I like a little diced fresh cilantro on the top. Unless there's already cilantro in the guac.
 
You mentioned onions but chopped green onions are really good on soft tacos. Also, pico de gallo if you're familiar with that. It's just chopped tomatoes, regular onions, jalapenos and a bit of cilantro mixed together and then allowed to sit overnight. YUMMY!!!

Either way, we always include sliced jalapenos for those who like a little fire.
 
Just a tip if you're going to eat this when camping... To make life easier in your wilderness kitchen, you might want to cook the meat & prepare it ahead of time, then put it in a freezer ziplock bags - you can freeze it or not. You can do the same thing w/Mexican rice. You can also shred the cheese ahead of time & put it in freezer bags.

I do this when camping & it is a big time saver for me.
