Full disclosure, I’ve never stayed at either one. I have visited them for shopping and dining for over two decades. The big way they differ from a Disney resort is there is no theme that is attempting to transport guests to another place like all of the Disney resorts. They are just really nice, though rather generic, hotels.
I would totally stay at either one, it just has always made more sense to stay somewhere else. Being able to walk or boat to two theme parks and take a bus to everything else Disney is plenty Disney enough for me. I also love Picabu, so that would be a bonus.
You are likely to see conventions, but the same is true of the Disney convention resorts. They’ve always been especially noticeable to me at the YC. That’s not the sort of thing that bothers me unless the conventioneers get rowdy after their meetings are over for the day, which I’ve never had a problem with at Disney (I’m sure it’s happened). I even got to see a free fireworks show outside of YC when we were leaving Epcot through the IG one night.
