Suggestions for parents nite out?

So we are returning to WDW for trip #3 in March with our two youngest children. They will be 6 and 4 at the time of travel. We have booked Kids Nite Out in-room sitting services for one of our nights there. We used them both visits last year for my birthday, his birthday, and our anniversary last year. This year we aren't really celebrating anything, but I would like to surprise him with something nice/fun. Because our daughter has some medical issues and our son is so little, we don't get to ride a lot of the really fun rides, so we do use that time without them to ride the rides we want to ride (like TOT, or any of the roller coasters, etc) I do all the planning so it will be easy to surprise him. Can be romantic, fun, or romantic and fun!

A few details: We are staying at POR, we will be there during the Flower and Garden Festival, and we are AP holders.
 
Our trip next week will be with our DD and her DH and their two children (ages 6 and 9) and her DH's parents.

Our DD and her DH will be having two "date nights" as we will take the children one evening, and her DH's parents are going to take them one evening as well.

I know they have dinner reservations one night at Yachtsman, and the other night at Portobello's. I think the night they are at Portobello's they just want to enjoy spending time together at Downtown Disney, doing a little shopping, maybe stopping somewhere for a drink or two.

You said you're staying at Port Orleans Riverside, maybe a romantic carriage ride through the resort would be something you'd be interested in. I believe it's $45 for a 25-minute ride.
