Suggestions for "light" TS Dinner?

We have two heavy lunches planned for our December trip...

Akershus RBH and Le Cellier for the CPP. I had hoped to have tea at Gardenview and dinner at Spoodles (appetizer meal) as light dinner options after these lunches. Of course - I can't get either!

Our Akershus day we plan to be in MK for the nighttime shows. Our Le Cellier day we will be in EPCOT all day.

Any suggestions for a TS where we can sit and have salads, appetizers or sandwiches for dinner? I'm looking for a TS as a rest period for my parents as opposed to a quick CS.

We already have meals at Raglen Road, Rainforest Cafe, Plaza, Artist Point, Yacht Club Galley, Yachtsman Steak House, Prime Time Cafe, Mama Melrose, Liberty Tree Tavern, Narcoosees, Kona Cafe, Flying Fish and Boma. Yes, this trip is all about the food and the Christmas decorations!

In MK, the Plaza has salads and sandwiches and would probably make a good lighter TS option.

In Epcot, maybe Tokyo Dining? I know I really like sushi for a light lunch, because the serving style means you don't have to worry about large portion sizes or order large quantities of food to try a few different options.
 
I would second the vote for the Plaza in MK. The menu is salads and sandwiches, with some great sundaes for dessert (if you have room).

At Epcot, I would pick one of your favorites. It's nice to go in and just have appetizers and dessert sometimes, instead of going in for a full meal. Depending on the time of day, you could try Beaches and Cream at Y/BC, but they don't take ADR's so if you go as the park is closing, there is usually a wait. However, they are open late, so if you are in Epcot late and wanting a bite after Illuminations, it's one of the few places open later than 9:30-10pm.
 
I forgot to put Plaza in my OP. We are having a lunch there already.

Beaches and Cream is a good idea. What is it like around 6:00? We've always wanted to try it; but as they don't take reservations, never did.

We need to eat before the parks close. My mom is diabetic and needs to eat at regular intervals.

On your MK day, you could hop on the monorail and head over to the Grand Floridian Cafe. They offer some nice light items on the appetizer menu.
