Hi all - I originally posted this on Theme Park Attractions and Strategies yesterday but I realized that I am really mostly asking about restaurants and bars so thought it might fit better here. If you read it there, I apologize for the cross-posting. 
DH and I are taking a no kids trip to WDW for our anniversary in October.
We are planning to sleep in every day, spend some early afternoons by the pool if the weather cooperates and then head out for entertainment in the late afternoon. We are hoping to find suitable distractions until 2am or later , so we are looking for late night suggestions.
Here is where I am so far with planning. I am not going to make any ADRs (gasp!) - we are going to wing it for the most part but I want to have a flexible plan of attack:
arrive Wed 10/5 - I won't get in to MCO until 9:30pm. DH will get to MCO at 5pm and will probably head to the hotel and check in. (I'm coming from a conference on the west coast). Since I will be on west coast time, I will probably be up for something fun this night but am guessing I won't get to the hotel until 11pm at the earliest.
Thurs 10/6 - going to MNSSHP 4pm-Midnight. Looking for suggestions for late lunch and afterparty
Fri 10/7 - going to DHS most likely. DHS closes at 7pm. Looking for evening activities. Planning to eat dinner at Starring Rolls at DHS so also looking for brunch ideas.
Sat 10/8 - not sure what we will do this day. DH wants to see Roger Hodgson at Epcot so we will do that today or tomorrow. I know weekends are not great for Epcot during F&W but I think we will manage OK. Epcot closes at 10pm so looking for late night fun after that.
Sun 10/9 - not sure - maybe Epcot or maybe back to MK which has evening EMH until 1am
Mon 10/10 - might be our only early day as we are considering a trip to the dark side to see WWHP and as much of the rest of US and IOA as we can in one day
Tues 10/11 - we leave MCO around 10am
We are staying at the Swan so I really want to check out all of the great things on the Boardwalk. So far on my list are:
Jellyrolls
ESPN Club
Big River Grille & Brewing Works
Beaches & Cream
cupcake from the Boardwalk bakery
plus I was thinking about checking out:
karaoke at Kimonos at the Swan
Captain Cooks for the grown up grilled cheese and make your own Dole Whip (I understand that the grill closes at 11pm but some items are available 24 hours - does anyone know if the Dole Whips are available 24 hours?)
Contempo Cafe for the yummy looking Florida Strawberry cupcake (can you tell I read the cupcake thread?)
and I have to make sure to get over to DTD at some point to buy stuff for the kiddos
