We stayed at the Dolphin recently. Picabu is open 24 hours. It's better than counter service, kind-of like cafeteria service. BlueZoo is exquisite. They had a prix fixe dinner special that we took advantage of. We were at Shula's Steakhouse with a group. Me and another gal split an entree, which was plenty. Food, wine and service were impeccable. The Fountain was a sit-down with casual food. It also had ice cream fountain treats, and you could order coffee drinks for there or to-go. You could also order take-out meals at the podium. Up on the main lobby level, there was Starbucks in the morning, then it was a bar in the afternoon. I think the same set-up is at the Swan.
At the Swan we went to Il Mulino and had a great & expensive meal. I have enjoyed Garden Grove in the past, not this latest trip. Also regret not trying Kimono's Sushi Bar. By the pool (for either hotel) you can order the usual casual fare. Your room key gives you charging privileges at both Swan & Dolphin.
I strongly suggest while you are there, try Kouzzina on the Boardwalk. We had an out-of-this world dinner. Others raved about the breakfast. Still others adored Flying Fish on the Boardwalk.
The Swolphin has some of the best restaurants on Disney property, IMHO.
You can go to swandolphin.com & click on dining for the most up to date menus. Be sure NOT to miss the Cabana Bar & Grill for an afternoon beverage & snack. It is Fabulous!
Kimonos has the Best sushi on property. Il Mulino, the best Italian & BlueZoo is amazing. Even when we're not staying at the Swolphin (which we usually do) we always head over for dining. Can't be beat & hasn't suffered the trimming down that the Disney owned DDP places have.
I too am planning my first stay at Dolphin and got some advice that you can use your AAA card (if a member) for restaurant discounts at S/D. Perhaps someone more "in the know" can post details on the discount.
