Suggestions for afternoon/night with no plans

Hey everyone, myself & my fiancé have decided to take a last minute trip next week (sep 7-10) to surprise his grandparents. As this is my most last minute trip I've ever booked, I have next to no plans made—not even any ADRs so far! On Friday we will be spending the morning at AK and his family will then be attending the MNSSHP that is sold out so we will not be there. That gives us the entire afternoon/night to do whatever we feel like....so my question is what would YOU do with a free, unplanned evening. For reference, we are staying at POFQ and have APs so any park is doable. We will also be doing food&wine on Thursday. We are seasoned disney goers but I know there's still so much we haven't done. Any recommendations would be wonderful!

We do this often on our adult trips. We have several “go-tos” for a night out at Disney. One of my favorites is dinner at Geyser Point, boat over to MK then take the monorail to Trader Sam’s, Enchanted Rose, Outer Rim. Fun night with great food and drinks!

I have been wanting to check out trader sam's so we might give this a shot! Plus WL is our favorite resort.
