Suggestions for a non-Disney Day?

My DH and I (both in our 50's) are arriving around noon on the Friday after Thanksgiving. We will have a car and plan to spend that first night at AmeriSuites Calyso Bay. I do not want to visit any of the Disney parks that day (we'll do that later in our stay). Have also ruled out IOA/US (too busy without FOTL access) and Sea World.

Does anyone have any suggestions for that afternoon and evening? We're planning to visit Cypress Gardens on Saturday and then return to Disney on Sunday.

Thinking about maybe the Ripley's museum, Bok Tower Gardens or the Orlando Science Center. Would a visit to Celebration be worth the time?

Any other suggstions?

We're going to have a couple of non-Disney days too. All that you suggested, but we're also going to drive up to Winter Park and do the scenic cruise. There's some nice museums and gardens up there too.

Seaworld has a second day free thing, so if you went to Seaworld, more than likely you would get a second day free (unless they pull the offer between now and then)

I went last week, and it was pretty deserted at Seaworld!
