Sugar-free desserts or snacks?

Hello,
My family is traveling to WDW next month with my mother-in-law who has diabetes. We are all fans of the wonderful food Disney has to offer. I am wondering if anyone has specific sugar-free 'sweets' they would recommend. We frequent DTD and all of the resorts so any location is fine.

I am a Type 1 diabetic and I'll have to say Disney does a great job with sugar free options. All the restaurants I've been to have had sugar free dessert options and if they didn't all I had to do was tell my server and the chef would create something I could eat. Usually fresh fruit or strawberries with sugar free ice cream. This is the same with my entrees. If there isn't anything on the menu I can eat just talk with your server. I've found them to be very accomodating. THey even will do this at DTD. We were there a few weeks ago at the rainforest cafe and I noticed the boy at the table next to me was diabetic(he was wearing an insulin pump.) His parents told the server that there wasn't really anything he could eat on the kids menu so the chef came out and talked to him about what he liked to eat then made a special meal for him.

I've always found something sugar free or healthy (like nuts) at the gift shops too. The stands through out the parks that serve the pre-packaged ice cream always have a sugar free Popsicle.

I think it's a great touch that Disney does these types of things! I get to enjoy a little something sweet instead of sitting there and watching my husband get to enjoy everything.
