Substitute for Veg Oil in Muffins

I'm making muffiins to take to the airport with us early tomorrow morning and just realized I don't have any veg oil. What can I use in it's place? A smaller amount of Crisco, maybe??? I have olive oil, is that ok??? I know you can use apple sauce, but I don't have any. Can I just use water?

Any help out there? I'd really appreciate any advice you can offer. :listen:

Do you have canola oil? I would use that instead of olive oil - which would be too strong of a flavor. Applesauce would be my first choice (I use this as a substitute in all my muffin recipes) but you don't have any.
 
I use olive oil all the time. The only cooking fats I have in my house are olive oil, butter, and coconut oil, and I've only used those for years. I don't notice the olive oil in baked goods. If you eat it regularly, you probably won't either.
 
I forgot to say that you could also melt butter. That would probably turn out really delicious, especially in muffins. Just make sure it's not still hot when you add it to the other stuff. You don't want to make scrambled eggs.
 
She doesn't have applesauce!!!!!! I think you can use the olive oil. I think the flavor dissipates when you bake it. It wouldn't be my first choice, but better than crisco. I wouldn't tell your family that you used olive oil though. They may "taste" it if you do. Melted butter would work too. I just realized that you posted this nearly two hours ago so you probably already baked them. :rotfl:
 
Olive oil might be okay in muffins, but I used it once in brownies and we had to throw them out! :crazy2: Chocolate is a terrible thing to waste :(

I was curious so I googled it :) You can use the same amount of crisco, or a little but more butter (7/8 cup oil = 1 cup butter)
