Stupid question

I just can't get my head around it at all so can some one tell me how do you do a raffle?
I've got a lot of new stock that I just need to get rid of so I thought I would do a raffle on our loyalty night, but how do I do it? Do I allocate prizes to the tickets before the time or do I just let people that get picked choose what they want?

You could let people pick their own prize or you could choose the prize before the ticket is drawn. Another way i have done it is have all your prizes written down on little pieces of paper and then the winning ticket holder picks out a piece of paper and then whatever is on it they win.
If not just have 1st 2nd 3rd and so on marked on the prizes so that everyone would know the order of the prizes
