Stuffed peppers... need ideas...

what to stuff them with OTHER than rice? I don't do rice.

DH stuffs his with a ground beef, shrimp and bread crumb mixture. He makes them every Christmas- yummy!
 

My mother does tuna fish, I think the kind with the oil. I believe there is also olives chopped, gravy (the red stuff/sauce) either in it or over it, parmagian cheese (I think) and some other stuff but I can't remember what.
 
Ha! That is what we had for dinner tonight. In my quest to make my DS (20) completely independent in the kitchen, I put him in charge of dinner once in a while, and tonight was his night before heading back to college. Anyway, he stuffed the peppers with rice and ground beef, but he had another recipe he was considering. It used ground beef and breadcrumbs (with seasonings and tomato sauce, similar to meatloaf ingredients). Anyway, it sounded good, but what he made was great! :)

Always make mine low carb (husband diabetic). I stuff them with spicy italian sausage mixed with mozzarella cheese, chopped spinach, some spices and egg to hold it together. I cover them with spicy V8 juice and bake.

I stuff them with ground beef mixed with taco seasoning, salsa, and kidney beans. Top with a little cheese and fat free sour cream... taco stuffed peppers. They are SO good, even my son eats them, and he won't touch rice stuffed peppers.
 
Thanks alot PD, now I'm hungry for stuffed peppers;) !!! And I already started ham.......well, there is always tomorrow:thumbsup2 !
 
How about Orzo. The other ideas sound great, but if you want true stuffed peppers they don't usually call for the ingredients suggested above. I have an idea...why not try every idea once a week and then come back and tell us your favorites. Can you tell I'm a foodie !?!?;)

Well, I'm trying the taco one for dinner!
 
I've done them similar to the Taco ones, excpet with ground turkey, taco seasoning, salsa, and black beans (you could leave the beans out for low-carb). Top them with some extra salsa and cheddar/jack or a pre-shredded mexican cheese blend and bake- yummo!
 
Ground beef cooked with chopped seasoning (onion, green pepper, garlic), parmesan cheese, italian bread crumbs. Drizzle with olive oil and bake.
 
When I was on Atkins I would use TVP or TSP (textured vegetable protein/textured soy protein) reconstituted with broth in place of rice in my recipes. You can find it in the health/organic section of many supermarkets.
