staying on disney for a week

If you can make do with just a kitchenette, you could look at the family suites at All Star Music and Art of Animation.

I agree with OP....You should rent points. We do and are staying at AKV, 2 bedroom which has a full kitchen. It works out great for us and we save money. We either have to stay in a family suite at AoA or pay to stay at a Deluxe, which is a bit out of our budget. We don't fit in a moderate(there are 7 of us). Renting points gets you in a deluxe but in a less expensive way;)

There's also the cabins at Fort Wilderness...I know they have a full kitchen and they would have fit our family but it's just not for us. Not saying there's anything wrong the cabins, everyone has their own likes and dislikes. We live in upstate NY so I see enough trees and woods lol. When I go to Florida I want palm trees! If you choose the cabins you can use the resort pool at FW and I hear it's really nice but depending on where your cabin is, it might be a bit of a walk/ride. I think you can rent golf carts to make it easier to get to the buses and pool.

If you need a full kitchen and 2 bedrooms, your only option is a 2-bedroom villa at a Disney Vacation Club resort (also known as 'deluxe villas'): BLT, AKV, BWV, BCV, SSR, OKW, VWL

There are two ways to get a reservation for one of these rooms. You can book them through Disney, as you would for any Disney resort. These villas are pricey, and are in limited supply from Disney, as most of the room inventory at these resorts is owned by the DVC membership.

Or, you can rent a reservation from a DVC member (popularly known as 'renting points') We have a DVC Rent/Trade board here on the DISboards, where you can find members who wish to rent their points. You should definitely read the stickies at the top of the board to understand the process, and how it differs from booking a room through Disney.

Another option would be to use a service like DVC By Request, which will act as an intermediary. You tell them what resort, room type and dates you'd like, they find an owner who can make that reservation for you and make the arrangements.

Many people like David's DVC Rental, he offers a good service and it's secure.
I don't know what your budget is, but OKW and SSR are the least expensive, then you have the DVCs at Wilderness Lodge, Beach Club, Boardwalk, and Kidani/AKL.
The Cabins at Ft Wilderness have 1 bedroom and kitchen. Then there's the family suites with 1 bedroom and kitchenette, a fridge and microwave in 2 of the value resorts. Depends on how much cooking you intend to do.
